Robin yes you can create almost any design you want. When I designed my own stencils with joggles I wanted to keep in mind that they will be creative and not similar to anything I've seen.

Could you press the glue, while still warm, between two sheets of glass or parchment paper to make it less bumpy and a more even surface?
yes that would work. I know someone did that, they said in the comments
