Two days ago I made a strawberry flavored cake using reduced strawberry puree in the batter. This is a cake I've made *many* times. But when I went to cream my sugar and butter and then added my egg whites I thought "oh no, something isn't right". It looked just like how your batter did (like it had curled a bit). End result? The texture of my cake came out the best it ever has since making that cake!! 😋 Had I seen your video (I realize it wasn't up yet, lol) prior to putting my pans in the oven, I wouldn't have been stressed out for the 30-35 mins it took to bake, lol. BTW, that's a really nice piece of equipment you have there! I'm almost afraid to Google the price point on it.... 😕 Great video. 👍 I do love me some coconut cake. Would love to make it but I only have two 9in rounds. Should I divide the batter between the two or ??...

You really confused the whole recipe by saying you were adding egg whites in the beginning but then you talk about adding the egg whites and folding them later ...... very confusing and the fact that you don’t have the ingredients listed where you can see it next to the video makes it difficult because you have to keep going back-and-forth. Please review the beginning of this video to see your error with the egg whites. You make it sound like you’re adding the egg whites to the initial mix which is what I did and then watch the rest of the video seeing that you’re adding The egg whites later to the batter.

Looks fantastic! If I'm going to bake 6" layers instead of 8" layers, is baking time still the same?

Liz, can you use this as a base for an Italian Cream Cake by adding pecans? Are there any other ingredients, e.g. almond extract instead of the coconut?
