I love the part when you are putting in the villagers and there are hundreds of minecarts stacked on top of each other. It just shows how much work and how many materials this farm took. I'm glad this has over 200k views for a relatively small creator. Keep up the great work!
Having a time indication would be extremely helpful in the video at the top right or something. The amount of time you put into these builds are astronomical

I think there's only one way to describe your behavior: you're the Josh from Let's Game It Out of Minecraft. You take ideas that sound fun and/or easy and/or simple and turn them into a stupidly long or complex process. All while sounding completely dead inside from the sheer insanity of the work you've given yourself.
