- This is an adaptation to braised lamb shanks on the oven or slow cooker. Putting the lamb shanks in the smoker really adds that extra layer of taste that only the smoke can add. And the taste? How can I describe it - the consistency reminds me of pulled pork, but the flavor is much richer. It is absolutely amazing. And the vegetables that I smoked with the lamb shanks were on point as they were cooked in the same lamb fat.

It may take less smoke flavour if seared first i.e why you reverse sear a steak but this is being braised anyway so may work but I do think less smoke flavour
