THE BEST LAMB SHANK EVER! - Kamado Turk BBQ on Kamado Joe Big Joe

Again we have been told no freedom in London from Covid 19. Usually we would have been packed with Turkish Weddings which we haven't attended in over 2 years.
So I thought let's cook the best dish served in Turkish weddings, Lamb Shank AKA Kleftiko AKA Kuzu Incik.
Kamado Joe Big Joe. 2 hours at 200c - meat wrapped in parchments and tin foil, along with potatoes, red onions and garlic. Mixed herbs salt and pepper.

I would be so honoured! If I had to change one part of this cook, I would drop the temp slightly (160c - 170c) so we get a longer and more tender cook.
