I think even if you have 3600mhz speed of ram, if your processor only supports 3200mhz which I think Ryzen 7 5700G supports. Only the 3200mhz will be implemented or used.
Like for example the battery of your phone was specified to charge at a specific wattage, even if you use higher wattage for faster charging, excess watts will be disregarded and will still get charge in their respective charging speed.

Motherboard support only matters when the motherboard is lesser than the cpu capabilities and also the ram. Three of them compliment each other, as a result, the lowest or slower speed will be used or implemented.

Although you can use overclocking method if supported by the motherboard, but I dont think thats enough to achieve 4400mhz with only 3200mhz supported cpu and only 3600mhz ram. But lets assume that is achievable by the motherboard capabilities, then goodluck to the other components for their lifespan.

Vega 8 up to 2GB Vram
128GB SSD
500GB HDD
8gb DDR4 3200Mhz RAM

What could I add, if its possible, to increase performance in some of these games?
For an example: Elden Ring on High Settings. Could I add anything to this PC that'll allow me to do that?
Also Skyrim, decently Modded Skyrim. Could it handle that on High Settings?

Resolution will be the primary way to regain fps when using an iGPU like this. By dropping from 1080p to 720p and utilitzing FSR 2.1+ you should see a significant fps improvement. Just remember the lower the resolution you go, the smaller the screen you will want to hide the low res artifacts.
720p's best screen size is 13.3". Alternatively, you can use a 1440p monitor and using 1280x720 (720p) resolution on a screen like that should seem pretty nice.
