Wonderful. Loved the colour. We extract juice of lemon, add required salt, turmeric and just about half a teaspoon of sugar (just to balance the sharp sour taste of the lemons, only chillies and. salt won't suffice for this) to it and mix it till the salt and sugar dissolve. We also add a little ginger (finely chopped) and of course Asafoetida to the tadka. After the basic seasoning is done (just as he has shown it here), finally we add the lemon juice mixture and switch off the flame in just. a couple of seconds. This is immediately transferred to the rice (we don't add rice to the same pan) and. mixed well. Finally we add finely chopped coriander, cover the vessel and let it rest for a while. The best dish that go well with this is spicy potato fry /roast (prepared the Tamilian style not the deep fry) or colocasia fry,/shallow roast raw banana stir fry/roast babsically anything that will balance the sourness with a sort of starchy spice taste in the mouth. Most of us Tamilians don't like the sweetness of the coconut based dishes for this. PS - Before anyone blasts me for commenting with suggestion on RB's video, my disclaimer - I am a Tamilian, cooking this dish every week for the last 20+ years, learned it from my mom and grandmothers .

As an Iyengar, I believe you did your research well. Between 1955 and 1960 we used to travel between Trichy and Madras in a Vauxhall. We had a tiffin carrier with puliyodharai and lemon rice with appalam and avakkai oorkai (pickles in red chillies). My grandad would park the on the side of the road and we would sit - all adults and as many kids that could be packed in a car. Lovely memories. Ranveer we finished it off with Iyengar thayir sadam. Do write about it :)

Bilkul correct explanation- that pinch of fenugreek powder n that asofitida both make the difference for Iyengar cooking for Lemon rice n Puliyodhare :) The way he gets to understand the dishes, is what we love about Chef paji.. Badiya ji Badiya 🥰 But small correction.. this dish is best eaten with fried appalam(papad)/or proper traditional fryums.. that's the epic combo.. it's like chana Bhatura n chole.. it's like that.. Anyways upto everyone's taste.. No offence to anybody, Just an additional note n informaton: Also cooking lemon is generally not the way, the lemon is squeezed over salt n then after switching off gas n when the rice us mixed with tadka, the salted juice is poured n mixed well with this rice mixture.. coz as per the science of cooking traditional lemon rice cooking lemon depletes the vitamin c in it n squeezing it in salt, takes out the bitterness of lemon :) India always took food seriously n used its medicinal properties to the core.. That's why when Ranveer tells the story about every ingredient's origin in his videos, it's always lovely to listen to those stories 🥰🤩😍🥰🤩

For the last 7 days I'm following this recipe and cooking lemon rice for my family. The dish is such a hit that everyone demanding I cook it everyday. The only little change I have done is, while cooking the rice separately I add turmeric and salt in it cause I feared turmeric would turn the rice brown if I add it while making the spice.

Sir u can add chopped onions n hand crushed ginger garlic paste,corriander leaves n fresh grated coconut... Enhances the flavour...to get good flavour of lemon add the lemon juice when tempering is completely cool n do not heat it... We can also add raw mango n tamarind extract for sourness instead of lemon...tastes really great Another version of lemon rice add Onion, capsicum,carrot,turnip,beans, cauliflower,peas,potato,ginger garlic paste, grated coconut,curry leaves n corriander leaves to the basic tempering... We do this when we have to do in large quantities Your recipies are the best...u are my favorite...

This reminded me of my lunch in my school days 😭 My mom is tamilian, and I'm grown in TN. Hence, my lunch box would have each of these instant rices . Lemon rice/ tamarind rice( with kuzh vadam or ellai vadam)/curd rice(with vadumanga pickle🤤😭)/coconut rice/milk rice(not in lunch box)/ raw mango rice/ mint rice/curry leaves rice/beetroot rice/drumstick leaves rice with ghee(yum😋 and also healthy)/garlic powder rice/ all other kind powders mixed with rice and ghee /AND last but not the least "The Tomato rice"..my favourite and its kinda delicacy in my maternal side or you can say its a family dish 😂.They make almost 3 kinds of tomato rice and all are my favourite 😅.

@@gurjitsingh4268 Urad dal is basically a black coloured round shaped gram. Ghota urad means peesa hua urad. After Which it will become 2 parts of urad daal which is white in colour. And no, the daal is not boiled, since it’s sautéed in oil , it’ll become crunchy like fried channa😇
Add lemon juice in rice, give it a nice mix, then add that lemon mixed rice to the pan which has all the ingredients.. aise karne se rice absorbs juice.. the best way to make this recipe is from left over rice..

For kannadigas lemon rice called chitranna is a comfort food.we add grated coconut also. One can also make chitranna with citron ( called herelekai in kannada) .love your show

It goes well with coconut chutney. You can put lemon rice on dosa fold it and put some ghee and roast the dosa in low heat (it's bath masala in karnataka ) eat with chutney for ultimate taste.

Bro what is hing? I use it in daal but I have no idea what it is 😂 what's it made from?
@@JattJatt8 it is a resin from a tree or like a gum. Afghanistan and Iran have the top quality of hing but I don't know if they use it in their food.

For the last 7 days I'm following this recipe and cooking lemon rice for my family. The dish is such a hit that everyone demanding I cook it everyday.
The only little change I have done is, while cooking the rice separately I add turmeric and salt in it cause I feared turmeric would turn the rice brown if I add it while making the spice.
It is fairly common in South India to add wet or dry coconut scrapings to the tadka prior to mixing with the rice. Adds another flavor component.

Sir u can add chopped onions n hand crushed ginger garlic paste,corriander leaves n fresh grated coconut... Enhances the flavour...to get good flavour of lemon add the lemon juice when tempering is completely cool n do not heat it...
We can also add raw mango n tamarind extract for sourness instead of lemon...tastes really great

Am a mysorean too.. The only variation is we use groundnut oil, hing, copra/grated coconut and dhaniya leaves .. Everything else is same..

My mom is tamilian, and I'm grown in TN.
Hence, my lunch box would have each of these instant rices .
Lemon rice/ tamarind rice( with kuzh vadam or ellai vadam)/curd rice(with vadumanga pickle🤤😭)/coconut rice/milk rice(not in lunch box)/ raw mango rice/ mint rice/curry leaves rice/beetroot rice/drumstick leaves rice with ghee(yum😋 and also healthy)/garlic powder rice/ all other kind powders mixed with rice and ghee /AND last but not the least "The Tomato rice"..my favourite and its kinda delicacy in my maternal side or you can say its a family dish 😂.They make almost 3 kinds of tomato rice and all are my favourite 😅.

What is gota urad and are the dal boiled before use? Is it not too hard.
@@gurjitsingh4268 Urad dal is basically a black coloured round shaped gram. Ghota urad means peesa hua urad. After Which it will become 2 parts of urad daal which is white in colour. And no, the daal is not boiled, since it’s sautéed in oil , it’ll become crunchy like fried channa😇

Add lemon juice in rice, give it a nice mix, then add that lemon mixed rice to the pan which has all the ingredients.. aise karne se rice absorbs juice.. the best way to make this recipe is from left over rice..

It goes well with coconut chutney.
You can put lemon rice on dosa fold it and put some ghee and roast the dosa in low heat (it's bath masala in karnataka ) eat with chutney for ultimate taste.
