油炒「25克」腊肉或腊肠,炒出油,下「5克」虾米,「10克」青葱一起炒香,然后捞出备用。
剩下油,下「250克大芋头」切成的芋头粒炒2-3分钟,倒入「200ml」鸡汤(水或高汤),「半匙」糖,「1/4」盐,「1/2匙 」酱油,「1匙」蚝油,「1匙」油葱酥,芋头小火煮熟,芋头粒捞出1小部分备用,其余的芋头粒压成泥。
粉浆材料
Rice flour 粘米粉半杯 70克
Wheat starch 澄粉半杯 70克
水 1.5 杯 375ml
「没有澄粉可以用粘米粉代替」(口感会不同)
粉浆隔水煮,一边用打蛋器搅拌,到微微粘稠,关火加入芋头泥,备用的芋头粒,炒香的腊肉腊肠青葱,打蛋器搅拌均匀。
容器四面抹油后倒入粉浆,容器敲打台面几下,让粉浆平整,
表面洒油葱酥腊肉腊肠青葱。
中大火蒸30-40分钟,筷子看熟了没。凉了好切块。
直接吃或油煎。冷藏或速冻。

我虽然不是专业,不过也蒸过类似的芋头糕。中央部分較軟不要紧的。
只要確定熟透就别再去蒸(整)它了,越蒸越軟。放凉了會硬一点,請到冰箱冰透了又會更硬一点。那時候菜刀抹点油,很好切的

这是标准量勺 所有西人店都会有卖的(上网搜一下 在西方这是通用的量具)。多少克数要看食材比重,家里没有 大约就是汤匙 tbsp= 我们普通的汤勺,茶匙tsp 约等于小茶匙。

这个比例一定不会软的,请确定是用的量是准确的。
另外要确定一下你说的软是什么程度,这个视频做出来的和茶楼里的芋头糕 比 还要偏硬一点点。所以看你以什么标准来定这个软硬度。能顺利切片就是刚好的。
跟了比例,可是做出来的软软不能切...好像不熟这样的软软....
如果你确定比例没有错 ,那我就想不出问题了,因为这个比例 常识就可以判断 不会软的,实践来说这配比非常成熟,我 原来有个群,很多人做出来了 没有软的问题。 唯一可能就是没有蒸熟,确定一下你的容器是不是顶到锅盖影响透气了。
