A Weekend of Preservation in the Homestead Kitchen | Waterbath Canning |

- It was a weekend filled with preservation in our homestead kitchen. We picked up 80lbs of organic peaches and 20lbs of organic nectarines to preserve for our homestead pantry and freezer. We canned peaches and peach salsa, and froze peaches for winter smoothies. We froze nectarines and also made a basil nectarine shrub. These days we are swimming in pickling cucumbers, so I also canned a few jars of our favorite dill pickles, which we are making several jars of every couple days. I had a few lone banana peppers to use up so we also canned pickled banana peppers to enjoy throughout the year. I like to keep pickling brine in the fridge so that I can easily heat it when I have small batches of pickles to can.
Canned Peaches in Syrup:
3:1 Water to Sugar
Peaches, peeled and sliced
Fill jars with peaches to 1 inch headspace, and top with syrup to 1/2 inch headspace. Process 20 minutes for pints, or 25 minutes for quarts in a waterbath canner, adjusting for elevation if necessary.
Peach Salsa Recipe:

*I add 1/2 teaspoon of sea salt
Nectarine Basil Shrub:
2 c nectarines
1/4 c basil
1/2 c cane sugar
1 1/2 c raw apple cider vinegar
Mix ingredients in a quart jar and loosely tighten lid. Allow to sit on the counter for a few days, up to 2 weeks. Strain through cheesecloth and store in the fridge for up to a year. I like 1/2-1 oz in a glass of sparkling water or you can use it in cocktails.
Pickled Peppers:
6 c white vinegar
2 c water
3 cloves garlic
Bring brine to a boil and then reduce heat and simmer for 5 minutes. Remove garlic cloves. Pack peppers into jars, add brine to 1/2 inch headspace, and debubble. Process pints and half pints for 10 minutes in a waterbath canner, adjusting for elevation if necessary.

First time viewer. Video is very relaxing and nicely done. What kind of lemon juice is that? Did you buy it online?
Thank you for your kind words! I use Lakewood organic or Santa Cruz for lime or lemon juice, both should be available on Amazon.
All your vintage PYREX are so adorable 😊.
Thank you! I try to grab them when I can find them at thrift stores.
Just found your Chanel and I’m excited to see all the recipes! I need to can some peaches!

We did the same things on the weekend. Peaches (mine refuse to peel and float always). And peach salsa. And I made plum sauce.
Yum!! Plum sauce is on my to do list.
Your peach salsa looked so good. I may have to make some.
It’s always a hit! I hope you enjoy it.
Hmmm..... Oh, I see we have a good channel here. New to me. Subscribed.

Reminds me of homemade peach pie, so delicious.
Sounds delicious!
Yum! I just made the Zesty Peach BBQ Sauce out of the Ball cookbook, Sugar Rush Peach Hot Sauce and Peach Jam. Definitely going to try the shrub
The BBQ sauce and sugar rush peach hot sauce are on my to do list! I hope you enjoy it.
@@abbeyverigin you’ll love both. They are delicious.
@@abbeyverigin Hi abbey! I’m wondering if I could use honey instead of cane sugar for the shrub. I avoid cane sugar as much as possible due to health reasons and honey seems to be an alternative I can eat. Thoughts and advice is appreciated 🧡🍯🍑💛
@@amyparker1762 absolutely!
@@abbeyverigin ❤️. Thank you for responding so quickly. Have a blessed day!

Hi Abbey! I am a new subscriber…Luv your videos and glad I found you.? I noticed your stainless cookware… it is vit age looking? I have been looking for some myself and it is hard to find… can you share the brand? Thanks again!
Hi Lisa! Thanks so much, I’m happy to have you here. The brand is salad master.
What do you use for cleaning your counters?
Just a simple vinegar/water cleaner or Castile soap and water. Nothing special
Thank you! I try to stay away from store bought/chemicals as well. I’m glad I found your channel today! I am enjoying your videos!
@@losnolt thank you so much!
Just did pickle cucumbers a week ago and mine are super soft… any ideas of what I did wrong???😢
Sorry that is always disappointing when that happens? How fresh were they, and were they pickling cucumbers specifically? Did you trim the blossom end off?
Water level in jars 🫙 is should be filled up to the inch head space
Head space will depend on the recipe :)
