How to make a Filet O Fish but BETTER than McDonald's and a Homemade tartare sauce to boot!

- The McDonald's filet o fish is arguable one of the most divisive and much maligned menu items, the chain has to offer. It's the marmite of the McDonald's world. you either love it or you hate it. Now, before making this video i can honestly say i'd never tried a filet o fish before, and after giving it a taste...I won't be trying it again. it was pretty bland, uninspiring, and the filet of fish itself was pretty mushy and unpleasant. Also, as you will see in this video the sandwich looked like it was assembled by a drunk!
So i figured i could easily make a filet o fish...but way better! I used some nice fresh cod, fried in panko breadcrumbs for that awesome crunch. A fresh homemade tartar sauce as well. McDonald's steam the buns for their filet o fish, but I used brioche buns which are very soft anyway, so i didn't need to do that step. If you like the McDonald's filet o fish then you're going to LOVE my version.
To make my filet o fish that's better than McDonald's you will need:
For the tartar sauce:
►About 4 tbsp of mayonnaise
►1 tbsp of chopped gherkins (dill pickles)
►1 tbsp of chopped capers
►Juice of 1/4 of a lemon
►About 2 tbsp of chopped parsley
►About 1 tbsp of chopped dill
►Salt & pepper
For the filet o fish (there's enough breadcrumbs/flour to make about 4 sandwiches
►2-4 skinless cod loins
►50g of panko breadcrumbs
►50g of plain all purpose flour
►Salt & pepper
►Oil for frying
►Processed American cheese
►Brioche buns

The misaligned bun is because they build the sandwich in the box upside down, each half of the bun in their respective halves of the box. The tartare sauce and fish goes on top of the crown, and the half cheese slice goes on the heel... then they just shut the box, flip it the right way up, then send it out. They don't place the heel of the bun onto the sandwich like you'd expect.
I never got the half cheese slice thing either. I used to hate having to split a cheese slice in two, only for the other half to dry out because it could be hours before someone would order another one. I used to stick a whole slice in there instead.

Oddly the McD's Filet O Fish is one of my preferred sandwiches from McD's...the fish is better than their things they call burger meat which is a major disappointment. I think it is the tartar sauce - cause otherwise I rarely eat fish.. My grandma used to force me to eat poorly made/tasting frozen fishsticks almost daily as a kid, so I got turned off fish, and never was exposed to much fish besides those, early on cause she loved making them (she was a terrible cook/re-heater of frozen crap - her brussel sprouts were the most awful thing ever. I can count on one hand the few things she did cook good on --I have had to remake and re-do all her recipes to make them excellent). The only other time I eat fish is in Sushi---where I can taste the fish. Your sandy looks like a great job!! I would certainly eat it! Cheers!

So I just made my very first Filet O Fish. It was delicious. Since I don't have much time I used high quality frozen breaded Cod, pre sliced Cheddar (off the shelf), Brioche bun and Thomy Gourmet Remoulade (Tartre sauce - off the shelf). It took ca. 8 minutes to shallow fry the fish and whilst it's frying I put the cheese on the bun and opened the jar of tartre sauce. Perfect.

I had a friend years ago who would order the FiletOFish with tarter sauce on the side to force them to cook a fresh one.

Nowadays I am pretty sure they make them fresh everytime due to the low order count. But people often use the trick of ordering fries without salt to get them fresh and add salt from those little packets. Always better fresh.

Loads of shops do them poppy. All the big supermarkets have them down the ethnic food section. Or, better still if you have a independent Asian grocery store nearby, they should have them also. 😉

I complained to McDonald's about my favorite their filet o fish about the tiny amount of tartar sauce & the half piece of cheese. They said their info shows that customers prefer a HALF PIECE OF CHEESE & it's POLICY to only put a small amount of tartar sauce. To me, the fish is mushy & the tartar sauce helps disguise that, so it's not MUSHY & DRY! What it boils down to is McDonald's doesn't care what it's customers want, or else the food wouldn't look like it does. I think they steam their the bun to get rid of the wrinkles so it looks like a baby's butt not an OLD one. Thank you for showing them what it should look like. 😄😍🐟🍔💜
Have to confess... I’m a big foodie, have made fish burgers with homemade tartare sauce, minted mushy peas, Panko fried and beer battered versions with homemade brioche etc etc and yours looks super, super delicious however, I must fly the flag for McDonald’s Fillet - it’s the sauce! and even the token half slice of cheese. Whether they are cutting corners, it doesn’t matter, it really is just enough. Like it or not - it’s McDonald’s and they have mastered their own distinct flavour...nothing else quite tastes the same. I’m a burger purist, and love nothing more than some dry aged mince, smoke streaky, gherkins and a homemade burger sauce but the Big Macky D’s has a time and a place and despite the billions they make. There will always be a time in my life when I think ‘ooh, I fancy a Maccies!’ And 9/10 I’ll order a fillet.

You're welcome Julie. Super simple trick. Works the same if you need an egg wash for the tops of pies. A pinch of salt just makes it much more brushable

The shallow frying takes quite a lot of oil and oil's really gone up in price. Are you able to re-use it or is that part of the price for making a superior dish?
Oh I always re use my oil. I'll cool it and pop it in a container for next time

I'm in sw Ontario, and I hate to tell you this, but all Fillet-o-fish is served that way. They purposely place the cheese to one side (because they only use half a slice) and let the fish fall where it may. And I have had it that way from 4 or 5 outlet in the city I live. I once got so annoyed I asked to have the cheese centred as well as the fish, and I have say, McDonalds does cater to "special orders". But they are faster than cooking your own, and if you're at work without a packed lunch they are fine.

If you mod them, they have to do it fresh. I get them to chuck extra cheese, lettuce and onion in. It comes out piping hot.

It s probably best not to give the lemon to your cat or you will have a real sourpuss on your hands :-) When constructing the sandwich, (and I know this is not how McD does it) but I would put the tartar sauce on the bottom and put a piece of Red Leicester on the top. Speaking of which, can you do a vid on Red Leicester? It is a quintessential English cheese that I hear is somewhat endangered because of a dwindling number of artisanal producers.

However even from here in Corfu I saw as the UK government eased lock-down people were apparently prepared to queue for 4 hours to get to Maccy Dds. You know I worked at McDonald's here in Australia for 8 years 7 of which as a Manager and I never had a Filet o Fish either.

To make pungent herbs like tarragon and dill less pungent. Dip the herbs into boiling water for a few seconds. Chefs tip.

Can't eat onions, so this is about the only thing I can have at McDonalds.. Have not had to eat there for some time, but I don't ever remember there being cheese in one. Shredded iceberg lettuce, yes, but cheese no. I do something similar at home using either Aldi Chunky Haddock in breadcrumbs (£4) or Tesco Chunky Cod in breadcrumbs (£5.25) for a pack of four. Bake in the oven. Now need to make my own tartare sauce, yum.

Just get the vouchers in the Metro paper and you can get the fillet plus medium fries for £1.99. Job done. Note: The vouchers are not accepted at the drive-through Macdonald's.

Filet-o-Fish is the *only* sandwich I will eat at McDonald's, and that's only when whoever I'm with insists on McDonald's. The fish bit isn't bad, but they cheese-rape it with that oily square of yellow plastic and they also have a habit of getting orders wrong so it's always a gamble.
It's that cheese abomination. They could have at least used a whole slice! 😂
