  • Considered to be the world’s oldest form of ice cream, booza first appeared in the 1500s and now it’s hitting the streets of Brooklyn, NY. Republic of Booza offers a modernized approach to the dish, serving classic ice cream flavors like chocolate and pistachio, as well as more Brooklyn-esque flavors like sea salted oreo and aka miso. Beyond being stretchy, booza is considerably denser than typical ice cream. This allows for more subtle and intricate flavor combinations.
    Now more than ever, thanks to Instagram, people are eating with their eyes. But does all this Instagrammable food actually taste good? What’s the story behind popular new food like Taco Pizza or Cheetos Macaroons? “Fork Yeah” answers these questions head on. This series goes to the source of the latest and greatest food trends and most ‘gramable dishes to find out how they taste and what inspired the making of them.

    As a Lebanese native I couldn't help but get frustrated at this video. What is being made and sold here is not a 500 year old ancient, intriguing, and unusual ice cream technique, it is a very modern and WIDELY used ice cream making process across the middle east (known as booza, because this is the definition of 'ice scream' in arabic). It would have been preferable, in a few seconds, to mention and elaborate a bit more where this type of booza is made and the culture it comes from (not just that it originated 500 years ago somewhere in the Mediterranean). Booza is part of our current and modern culture, and not a pre-historic, forgotten way of making ice cream that they have re-invented(with already existing flavors) and brought back to life in Brooklyn, New York.
    Side Note: I have never been to this ice-cream place, I am commenting off of the information that was presented to me in this video.
    Fact: All the flavors shown are also made across the middle east (more predominantly in Jordon, Syria, Lebanon and palestine).It is not only made with qashta, flavors range from mango and lime to cotton candy and bubblegum.

      Kulkulan its not only turkish, its in other parts of the middle east as well, in lebanon we call it booza because thats ice cream in arabic ( we call all types of ice cream booza)

      Kulkulan this type of booza we call ‘lebanese booza’ in lebanon, since it has been traditionally made for generations

    FYI orchid ingredients are endangered and soo illegal. The same laws that regulate international trade in ivory, rhino horn, and panda parts also regulate Salep. Turkey's orchids are gone and smugglers are poaching them all from Iran which also breaks economic sanctions laws in the USA. Please share this on Instagram. The 38 species a in more danger than rhinos because people don't even know, so there's no stigma

      marmalade Booza is Syrian,Turkish Ice creams(Dondurma) are..well..Turkish but it is similar,The recipe for Booza has lesser ingredients than Dondurma
