      I hope you found the REAL and very rare Salep or Sahlab powder. Commercial Sahlab powder mix is just starch and lots of sugar - no orchid powder there. If it is listed as an ingredient in the Sahlab mix, there is no more than 1% Sahlab.

      @@m.c.fromnyc2187 Yes, they're mostly corn starch. The real ones are costly. I heard that the Turkish government is trying to limit Salep's production because a lot is being exported outside the country, especially Germany.

    Hi I am Greek. I live in New York USA.I found salep in Indian store 0.99 cent 0.8 gram..I make this ice cream my family and I we enjoy .but I put 1/2 tea spoon Greek masticha.yum yum thank you for the recipe neighbor..

    This "gummy" ice cream is another one of the trillions things I fell in love with during my study trip in Turkey 😍

    I was 9 years old when I visited Turkey. The chocolate ice cream there from the street vendors, restaurants, and so on, was the best ice cream I ever had. It was like eating a very rich chocolate cake. I wonder if this was what I was eating.

      I am glad you had great memories of our ice cream. I don’t know if it’s the exact same but Turkish ice cream is denser than others and rich in taste coming from different milks and sahlep when it is used

    I read that a combination of Konjac and Locust Bean Gum make an acceptable alternative for the Sahlep powder....also I wondered as I watched if Guar Gum could be used to replace the Sahlep and looked it up....some say it can be substituted! ....thank you for sharing

      Hi thank you! It is not the same, it has usually very less amount of the real sahlep but if you can't find it you can give it a try with a tbsp of starch together maybe. Not sure

      You can try guar gum/japanese konjak flour/locust bean gum combination of them..to get it as stretchy (not easy to find still lol). Arrowroot starch is an option as well.
      But if you use corn flour itll be..ok just not stretchy for every 3 cups of milk use....3 to 4 Tbs of cornstarch (research -Sicilian eggless gelato- uses cornstarch if you want to look up recipes).
      Salep orchid is an endangered plant difficult to sustain.

    They sell salep at the Turkish supermarket where I live but I think it's just the one for drinking as it's really cheap and has flavorings in it, so not the pure stuff.

    Unfortunately, turkish salep powder is not available outside Turkey, as it is banned from export Due to over harvesting. You can only source the one used to make dondurma, turkish ice cream from inside Turkey

    Original salep is on the verge of disappearing becouse the orchid wich it comes from is a wild species that can hardly be grown and now thanks to the excessive harvesting is going extinct. If I'm not mistaken it is now officially classified as an endangered species and foraging it in the wild is illegal.

    online people are saying the closest substitute for sahlep for icecream purposes is konjac gloucomennan (different from konjac flour). It's easy to order online and not as expensive or restricted as sahlep.

      "Sahlep tozu" olarak arayın. Türkiye'de üretilen bir baharattır. Fransızca karşılığı yok sanırım.

Question: After the evaporating process, how much milk is left, in other words, how concentrated is it? Have you ever tried using canned condensed milk or evaporated milk? Is the cream you use heavier than whipping cream we have in USA and Canada? (Like Devonshire clotted cream?) Now where to find the sahlep... and mulberries - my favourite dondurma flavour! 😀 Güle güle 🌷

      Hi Susan! It should coat the back of the spoon. This is how I check it 😊 you can use heavy cream, I used home made kaymak. I have the recipe on my channel but it is made with fresh unpasteurized milk. Looks like from the comments that it’s hard to find sahlep powder. Maybe you can check online

      @@TFT Thanks so much, the options in North America are limited for natural food as nature intended it, as you probably know. I am so tired of fruit and vegetables with no taste, because it is never picked when ripe, even the organic produce have no taste, too green. I miss the taste I remember from childhood, growing up in an area in South Africa, similar to Izmir area, with orchards and vineyards. 🌷

    This powder is called "Mastik" in the US. Pronounced Mas- teek.
