When the manager said "taste is the identy" ...omg that hit hard.
I was in Kolkata for 2 years, Kolkata is the cheapest city of the country. I really loved Kolkata, there, poverty is an issue but everybody wants to live happily with whatever income they have. The traffic discipline amazed me. I will definitely visit this city again. It was the richest and most decorated city of its time but dirty politics ate it all, Kolkata is still standing due to its cultural values.
You're right. Corrupt Dirty Politics not only in India but of many counties that will the the World fast not Climate Change.
I have not been to India but I like Indian food Pakora, curry chicken with potatoes and curry lamb to mention a few.

It starts to make sense all of a sudden. Their price is so low, so many seemingly quality food items, several people employed.

A good variety of (Northern) Indian dishes they serve here. I love the fact they put the chunk of onion and a dollop of pickle on every order. I would have at least three of their curries, ...with the rice and a plain naan: Saag Paneer, Channa, and the Mix Veg -- how could you possibly go wrong?

I went to mumbai & Goa in 2016 and i'd love to visit India again, and that curry looks tempting and yummy.
You should totally visit Punjab for the most amazing food.

It's very unhygienic food. Can't they wear gloves? Can't they prepare food with cleaner utensils? Can't they use a cleaner way to cook the food? And can't they keep their kitchen area clean? I will never recommend anyone to eat food from these cheap streat vendors.

Correct. Hygiene is necessary, but they charge too much for it that it goes beyond the pocket of common people. Also this hygiene thing has started recently, people are eating for decades and nothing has happened. One interesting fact, the study conducted by CDRI about spread of corona in India has shown that not opting "ultra hygienic" habit in their lifestyle has made Indians resistant toward the virus, hense the lower percentage of affection in Indians. What's more, even a popular food vlogger has said that she has eaten so called unhygienic Indian street food without any illness, and even in most hygienic places in other parts of world and got sick. Hygiene is about common sense of how much unhygienic you can get without harming yourself, because as a human you are also not "pure". There are several organisms living even on your face right now.

I mean i love India it's a great and powerful nation and i would've loved to have tried those dishes, if it wasn't for the total lack of any sanitary rules and regulations like we have over here in Europe, God bless !
I dont disagree with the fact that sanitary levels are kinda low but i can assure you one thing that food is fresh. They work on line to line basis hence make only that much that they can possibly sell. Usually nothing is stored. Each day fresh vegetables is procured and cooked.
And yes taste is rustic and best. For example croissant of streets of Paris i had were the best even more than some i had in other 5 star hotels.
This is what I hate most about most Europeans or general first world country people!! You think the world has to cater to your level of hygiene and what’s considered sanitary!! Go jump off a cliff this food is made fresh that’s what’s sanitary about it!! Sanitary is different from country to country leave them alone! Don’t ever go to India they don’t want you there trust me. and if for a second you think Mcdonalds is prepared in a more sanitary way than this your in deep denial or just delusional they have been exposed time and time again. this food is beyond fresh and sanitary
