One of the best Indian snacks cum breakfast options out there is Chole kulche! Originated from the Punjab region, this dish is loved all over the country and is now making its way in the west too. A delicious combination of an all-purpose flour bread tossed in butter along with tangy and spicy chole, chole kulche is one such dish that we Indians just cannot resist. It is made with white peas and mixed with simple spices like red chilli powder, salt and chaat masala and topped with some chaat masala gives it all that scrumptious flavour. It tastes even better when topped with a little bit of butter and accompanied with fresh pickled salad.

Everyone talks about hygiene being a problem. I live in the US and it is the same way some places. Just because it's a nice restaurant doesn't mean they follow the rules! My son is a manager at a restaurant and everyone in the kitchen wears gloves except the guy grilling. He doesn't touch the food with his hands. Plus the high heat will melt the gloves. It happened to him one time. They're once was an issue with mice one winter. They look for warm places to stay and food. They can get in anywhere. His kitchen is super clean. It's not always because it's dirty. He closed the restaurant down for 4 days and had a pest control guy come in. They found a small hole at the pipes. Fixed it and done some spray. Never had anymore mice. He says you can't get every little crumb. I prefer someone to wear gloves but it doesn't happen all the time. You don't see what goes on behind the scenes. If you don't trust it, then go somewhere else and eat! 😊

INGREDIENTS OF CHOLE KULCHE
4 Servings
1 cup white peas
3 tomato
2 onion
2 green chilli
1 teaspoon chaat masala powder
salt as required
1/4 teaspoon turmeric
10 sprigs coriander leaves
1/2 teaspoon dry mango powder
1/2 teaspoon baking soda
50 grams butter
HOW TO MAKE CHOLE KULCHE
Step 1 / 3 Boil The White Peas
Start with boiling the white peas. You will have to soak the chickpeas in water overnight. Add them to a pressure cooker along with some water, salt, a pinch of baking soda and turmeric. Bring to 2 whistles and then let it boil on low flame for 15 minutes.
Step 2 / 3 Mash The Chickpeas And Add Add In The Spices
Once boiled, mash the chole with a spatula and transfer to a bowl. Do not separate the water from chole before mashing. Transfer the chole to a large bowl and add in chopped onions and tomatoes along with chaat masala, salt, red chilli powder and lemon juice.
Step 3 / 3 Toast The Kulchas
Toast kulchas on a hot tawa with some butter and your chole kulche are ready to serve! Do try this recipe, rate it and leave a comment below.
