Lent Friendly Bun Rieu - Vietnamese Tomato and Crab Noodle Soup

  • Up next on my Lent Friendly recipes is one of my personal favorite. This is Bun Rieu or Vietnamese Tomato and Crab Vermicelli Noodle Soup. I actually enjoy this version over the original version because it’s lighter without pork. I replace ground pork with jumbo lump crab meat (costco). Dried shrimp is also essential to make the best broth and I highly recommend @khomarket dried shrimp.
    I’m using both fresh tomatoes and while canned tomatoes. Tip: sauté your tomatoes with tomato paste to get the beautiful red color. I hope you will try this recipe, let me know if you do!
    Baer on a 10 qt pot:
    1 lb shrimp with head ( remove the shell but leave the head)
    1 cup of jumbo lump crab meat
    2 eggs
    1.5 cup of @khomarket dried shrimp
    1 cup of jar or canned crab paste
    1 daikon cut into smaller pieces
    1 onion
    2 tbl salt
    2 tbl mushroom seasoning
    2 chunk of palm sugar
    8 roma tomatoes ( I use canned whole tomato since I didn’t have enough fresh tomatoes)
    1 shallot thinly sliced
    2 tbl fish sauce
    tomato paste
    cooking oil
    tofu puff
    vermicelli noodles boiled
    Garnishes/Condiments
    lemon
    veggies/herbs of choice
    sambal
    fried shallots
    shrimp paste
    1. Rinse your dry shrimp until clean. Soak it in hot water.
    2. Fill up your pot with water, add dried shrimp, daikon, and onions.
    3. Let it come to boil and skim impurities when necessary.
    4. Season with salt, mushroom seasoning, and kale sugar. Pop on the lid slightly and simmer for about 30-45 mins.
    5. Remove the dried shrimp from the pot and ground it with a food processor. Also ground the shrimps.
    6. In a bowl combine ground dried shrimp, ground fresh shrimp, crab meat, 2 eggs, canned or jar crab paste ( 1/2 cup), and some salt. Mix well and let it sit in the fridge to bind.
    7. Sauté shallots in oil. Add tomatoes, fish sauce, and about 1 tbl tomato paste.
    8. Add the sautéed tomatoes and tofu puff to the pot.
    9. Bring pot to boil and then spoon in the crab mixture in step 6. Let cook for about 10 minutes. Adjust taste with additional dish sauce and sugar.
    10. Make yourself a bowl and enjoy with all the toppings.
