  • Last week I showed you a new cut that for sure blown my mind and many of you guys loved but most of the comments were about the similarities with our beloved picanha. So today we are putting picanha vs the Argentinian cut to see what is best. Yes, You guys asked for it and as always we will deliver. We are putting the famous queen vs the new king of the steaks to see, in a blind test, what will reign supreme!

    That Argentinian steak is a striploin cut w the grain. And then final cut to serve against the grain. Great idea.
    I think given that it's such an accessable cut of meat you should go to Costco get a whole striploin and show how to clean it and cut it.
    Also you should start to call it the Ninja steak. Brand it, own it and make it yours. I know you did not invent it but you are one of the first youtubers to bring it to the masses in North America
    I vote to see a video on you making that cut from scratch and we go forth calling it the Ninja Steak

      Not really, you should never cook a picanha in the reverse sear! 😀 it will get chewy!

      @@SaltyTales wow I’ve only ever cooked it at around 250 until it gets to 120, then sear it over intense heat. I have a wagyu Picanha coming Friday(my first one ever), so you highly recommend direct heat only? I’d love to try it especially if that’s that best way to do it!!

    Hey, if it's ever possible for you to try an exotic meat, I highly recommend trying alpaca! I had it in Peru before, it's very similar to beef but has a bit of it's own unique charm!

      We tried a few exotic meats here but never impala! 😀😀 Those meats are very difficult to get here in the US!

      I like my steak just below medium as well...strict medium rare doesn't have the same flavor profile and tastes bland in comparison for me

    Totally true. I know picahña is nice but its because is soft and tender, but talking about flavour the new York strip or 'bife de chorizo' as we say here in south america is much flavourfull

      @@SaltyTales I am mind-blowned. I ordered an Australian Wagyu ms7 picanha cooked it “low and slow” with an internal temp of 132ish and came out perfect... I have one more, will try the hot and fast method. My only concern is with all the flare ups won’t the meat burn after 5 minutes? Do you rotate every minute? Or keep it there for the full 5 minutes?

    So normally they just take a strip loin and cut steaks from one end to the other to make NY strips, right? So here they're just cutting it perpendicular to that for the Argentinean cut?

    I'm going to say something odd. I purchased a Picanha without fat cap. They just cut it off without asking the customer what I want.
    Anyway, I did a reverse sear and it was a little tough. What could I've done wrong. Btw, I coocked it as a roast on stainless steel grates.
    I did use your all about Picanha video.

    Don't lie, ninja. I always knew you were more biased towards the picanha.🙃
    Here in Panama it's popular but not nearly as costillón (a national cut) and eye round (which is stewed). The Argentine cut is also more popular down here, along the tri-tip (the one I cook the most in grilling days here).

    Ninja I Cooked a whole picanha last night. Came out very tough. Indirect heat 385 till internal temp 125f. Then seared it. I want to try again. How do you cook your picanha whole?

    let the steak reset with salt for 45 minutes, not 30 minutes! you need about 45 minutes for the salt to pull out the moisture then reabsorb

      But yeah at least season them the same next time.

      @@homersimpson6969 that would be dumb. Cooking them both the best way they each need to be cooked is the right way to do it. If you cook them both the exact same way but that way isn't the best way to cook one of them then that one will for sure lose. Like he said in other responses if you reverse sear picahna it gets chewy so of course it would lose no matter what if cooked that way.

      @@shawnbowen6833 Umm no. To claim something would be dumb, simply on one persons opinion without trying it yourself is ignorant. I personally have reverse seared plenty of picanha steaks and they are not "chewy". If you follow Guga foods, he reverse sears picanha all the time. But my point is, there is no one perfect way of cooking. However when you do a comparison, keeping variables the same does matter. Perhaps Ninja should of compared 2 steaks of each type with both cooking methods.

    Acá en Chile al Striploin le decimos Lomo Liso y siempre lo sirven con el primer corte contra las fibras (como el típico New York). Asique no queda más que replicar el experimento, a ver si realmente le gana a la Picanha (acá le decimos Punta de Ganso)

    2:04' wrong! Picanha is a Portuguese name for round or cap top sirloin. This cut started being appreciated as house specialty at Brazilian steak houses. Everybody knows picanha with other names but no one master this cut as the Brazilian Gauchos for a simple fact: Gaúchos use skewers... and Argentines, and all the Spanish south America don't. The skewers aloud the "endless grilled slices, rosted in one side and tender at the other, making possible the continuous service or rodízio, which is the land-mark of Brazilian steak houses. By the way, I live in Dallas for 17 years and don't know a single Argentinean steak house. Why? Because the way the Argentinean grill their steak is the same way Americans, Mexicans Chileans do: heat and grill stake cuts. Other information on why Brazil is so in at the meat? We are the #1 in meat production, passing US few months ago. Also soybean, cocoa, coffee and crops in general.

      Friend, I don't know what you're talking about, Argentine beef is superior to Brazilian beef, mainly because of the breed of cattle we use (Hereford/Aberdeen Angus) and the Pampas plain, ideal for grazing. In Brazil, Nelore, Brahman, and Brangus (Angus/Brahman mix) predominate, which are clearly less tender meats than Argentinian meats. And also, we do not use briquettes for grilling, we use firewood which gives a special smokiness to the meat. Brazilian meat really has nothing to do next to Argentine meat. And in Argentina we are all grillers, there is no person who does not know how to grill. Greetings!

    This wasn't a fair challenge!! You have to cook them to the same temperature, otherwise, people who like their steaks more cooked, will choose the one more cooked. And that's exactly what happened. You need to redo this challenge and cook them both to the same temp. Medium-rare should always be the standard temp to cook steaks.

      HAHAHA It does make sense as I tried to cook them both in the best way those meats are cooked... I know picanha can get chewy if cooked slow but it can be a good test... Let's see if I can make it happen that way! 😀😀

Like get one judge that eats steak rare and medium rare, and another judge that eats medium rare and medium.
