- Bhendi masala fry - Lady's finger masala dhaba style. Today's recipe is a tasty North Indian one. Made in dhaba style, it will set your mouth watering. This recipe for quick okra masala fry is one in which the lady's fingers or bhendi don't become slimy. Stir-fried with onions and a mix of zesty spices, it's a lip-smacking vegetable with a mix of flavours.
Bhendi masala fry is an easy-to-cook dish that goes well with either rice or roti. This lady's finger masala dhaba style recipe doesn't need any special ingredients but uses regular everyday spices and ingredients you normally have in your kitchen.
As mentioned earlier, this is a dhaba style dish. So we won't use a non-stick pan or vessel to make it as it needs to have that slightly burnt smoky flavour. Once you make and taste this mouth-watering dish, believe me, you'll want to enjoy it again and again.

Lydia, traditionally, in Goan cuisine, we don't use ready spice powders. The masala is always ground fresh and that is what makes our Goan dishes so flavourful. So we don't have any formula for garam masala as such. For the xacuti masala, you could check my video on chicken xacuti and make a larger quantity if you want to bottle and store it in the fridge to preserve the flavour, OK? For around 900g chicken: 1/2 cup grated coconut, 3 Kashmiri chillies, 2 bay leaves, 4 green cardamom pods, 10 peppercorns, 2 tbsp coriander seeds, 2 tsp cumin seeds, 4 cloves, 2 sticks of cinnamon about 1" long.
