How to make idombolo (dumplings) & ujeqe (steamed bread) | Dombolo recipe

  • Here is the full Recipe. Enjoy!:
    4 cups plain flour
    1 packet instant yeast
    2 tablespoons sugar (heaped)
    1 teaspoon salt
    Water
    1. Mix the dry ingredients in a bowl until well combined
    2. Add enough water to form a dough (you can use cold or warm water).
    3. Knead the dough until elastic, if it's too sticky add a bit more flour.
    4. Knead the dough on a flat surface until smooth (about 8minutes of kneading)
    5. Pour a teaspoon of oil into a clean bowl and place the the kneaded dough in it to coat it.
    6. Cover with a clean cloth and leave it in a warm place for about an hour until it doubles in size(e.g. sunshine or heated oven).
    7. After it has risen once, knead it again to its original round shape and size.
    8. Place the dough into a greased metal bowl or mould balls and put in mugs | For dumplings, drop balls of dough into stew.
    9. Fill a big pot with 2-3cm of hot water (kettle boiled) and leave it to boil some more.
    10. Once the water in the pot is boiling, place the bread (still in the metal/mugs) inside the pot.
    11.Cover it with the lid and leave it to steam for 50min to an hour.
    12. Keep monitoring water level in pot, if it runs out just add more boiling water from the kettle.
    13. After 50 min stick a knife into the bread to test if it's cooked. If the knife is dry and doesn't come out with sticky dough, your Dombolo is probably ready
    14. Remove tin from the water and leave Dombolo to cool down on the side until ready to slice.

    Thank you! We made both the steamed bread and the dumplings in the stew and we loved it. I started with about 350ml water and added a tablespoon from there. But I used bread flour so with cake flour you may use less.
