I really wish this video was posted a few weeks ago. Today is Rosh Hashanah, so my menu is set, half the food is already cooked. It's like posting a Thanksgiving recipe at noon on Thanksgiving. With that being said, this looks tasty and perhaps I'll make this for break fast!

I grew up on sweet noodle kugel and LOVE it. The first time I made it I was away from home and couldn't remember a step. I called my mom and she actually pulled off the road to answer. 😂😂 Def making this recipe soon.

I make both a sweet kugel and an onion kugel. I’ve never seen the cottage cheese blitzed before because I thought the idea was for some additional texture, but I will remember to do this next time because my daughter does not like cottage cheese and here she would never know. My onion kugel is salt and pepper, but some herbs would be nice. Love the idea browning the butter. I brown butter as often as possible. 😁 Great recipe and Happy New Year.
Great video. As much as I enjoy sweetness in my savory dishes, I’ve always been on the fence about lukshun kugel. That said, I feel like some cinnamon and raisins might work really well with the alliums in this one, in a sort of North African way. So… do you have any interesting spins on potato kugel? I’m wondering if it would be possible to bake one in such a a way as to develop a tadik/soccarat/nurungji? It’s a great side, but I always feel like it could use a bit of crunch.

It’s a little weird to me to see a kugel without the cornflake topping, even though that doesn’t really go with a savory kugel. I think I’d add mushrooms to this, though.
I probably have to go buy some cottage cheese. Like nobody even buys or has it anymore unless they need it for a specific recipe, which is like no recipe other than this one or if you have an aunt still making old 60's trend cottage cheese salad or something.
Seems like it cries out for panko topping. Also, since I hate cottage cheese _just_ that much (puréed, I know, but still…), I might sub with ricotta, and I wonder about using either cauliflower or cashew (or a mix of both?) to make it vegan (regular rather than egg noodles, as well, for that). I wonder about a tarragon (I know, it’s just that tarragon has to be ultra-fresh or it’s nasty), pine nuts, mushrooms, and truffle oil version.
