  • The ultimate in comfort food is a good kugel and this one hits all the notes for the Hanukkah season! It's also super easy and makes a nice amount for bigger dinners or take aways/pot lucks.
    NOODLE KUGEL
    12 oz. extra-wide egg noodles
    2 tsp. kosher salt, plus more
    ½ cup (1 stick) unsalted butter, plus more for pan
    8 large eggs
    ½ cup sugar
    1 lb. full-fat cottage cheese
    1 lb. full-fat sour cream
    2 tsp. vanilla extract
    1 tsp. ground cinnamon
    Preheat oven to 350°. Cook 12 oz. extra-wide egg noodles in a large pot of boiling salted water, stirring occasionally, until al dente, about 4-5 minutes. Drain, leaving a little bit of water clinging to the noodles.
    Generously butter a 13x9" baking dish (we prefer glass for even heating, but metal is okay, too).
    Make the creamy sauce: Cut 1 stick butter into a few big pieces and transfer to a small heatproof bowl. Microwave until butter is melted, about 1 minute. Let cool slightly. Whisk 8 large eggs and ½ cup sugar in a large bowl until sugar is dissolved and eggs are frothy, 1-2 minutes. Add 1 lb. full-fat cottage cheese, 1 lb. full-fat sour cream, 2 tsp. vanilla extract, 1 tsp. ground cinnamon, and remaining 2 tsp. salt to egg mixture. Whisk vigorously to combine. Pour in melted butter and whisk again to combine.
    Add hot noodles to the mix and combine well.
    Transfer noodle mixture to prepared baking dish, tipping dish to evenly distribute. For a really crispy top, pull a few noodles to the surface so that they’re poking out over the sauce.
    Bake kugel, rotating pan halfway through, until custard has souffléed, top is browned, and noodles on the surface are crispy, 50-55 minutes.
    Let cool at least 20 minutes before slicing.

    I used to work with a gentleman who crushed up cornflakes on the top before baking. It was delicious!

      I do that to my Mac n cheese sometimes..or preferably crushed up Ritz crackers mixed with butter n crumbled on top before baking..😉👍

    I’m not Jewish but I love the Jewish people and their dishes!! The first time i tried this dish I almost lost my mind!!😀 This is my all time favorite dessert among all desserts!!. Thank you!     Thank you so much for making this! Someone below commented about adding cornflakes on top. My Mom used to crush up cornflakes and add a little melted butter, an extra tsp of cinnamon and sprinkle it on top before baking....my mouth starts watering when I remember it.       Thanks, so much! I hope you give it a try, it's simple and really yummy. There are many variations as well. Some aren't as sweet, some have raisins, and there's a potato kugel that actually comes close to the babka I made, but obviously, no bacon, lol.

    I think I've had this before growing up and no doubt I loved it bc I love egg noodles..everything noodles really..just NOT spaghetti..im an angel hair gurl..lol..grew up on lots of Penn Dutch foods..cant beat home cooking..i just don't have that touch..thanks Helga ✌💙😄

    Mmmmmmm, yummy! Your recipe is the closest to the one my late mother used to make. Only thing missing is the dollop of sour cream on top! Thanks so much for making this heavenly dish. I look forward to many more dishes. We used to have "Milchick" Kugel for Shabbas lunch with gefilte fish and salad.

    Thx for posting this recipe. I have Ina Garten's recipe but never made it. A Jewish friend gave me her Aunt's recipe & its very similar to yours minus the vanilla. She adds raisins in with the noodles & sliced apples sprinkled with cinnamon on top of it. Will definitely make it to serve with brisket. Will also make your Boilo again....so very tasty!

      It's sweeter than mac and cheese. And often it is served as a dessert, but my family often just had it with dinner. There are less sweet versions, but I love the egg and cheese and cinnamon. It's very yummy! Thank you! 😀

    I like to make a sour cream topping or sauce to go over at serving. Sour cream, sugar, touch of salt, a touch of fresh lemon juice.- mix and pour over slice. TY for the perfect receipt. Now if you can just tell me where to get Hoop cheese in California for real blintzes. No cottage cheese!

    I work in a salon receptionist my boss she loves to bake and she makes really good desserts and the first time I ever had noodle pudding love with it and notice you put all called ingredients and one big bowl and then you put the hot noodles ride in don't you think maybe you should run it under cold water or lukewarm water and then pour it in with all the wet ingredients to pull it down I would do that it might spoil it a couple of seconds run noodles under the lukewarm water definitely going to make that looks delicious

    Interesting recipe but, I don't understand why you call it "she". I didn't know kugel had a particular gender.
