for me first deburr on stone and then on leather with stropping paste. rough burr gets off on stone, small one on leather. i feel like stone never gets rid of all the burr, small one you cant really feel with fingers
Yeah, the smaller, more stubborn part of the burr is only visible with the microscope. Sometimes I can kind of feel the smaller one if there is more significance to it due to not completely removing the other part on the stone. I have however noticed though, I can completely debur on the stone with Shirogami 2 steel. Not every time, but many times I am able to do so. I have always found Shirogami 2 steel to release the burr way more easily than Stainless steel.. Stainless always wants to hold on due to softness is my guess.
@DroneShotFPV i think that has to do with machineability. More alloying elements, more stubborn the burr is...and of course hardness...softer steel bends and doesnt break off
Definitely for some of us is also relaxing kind of like a therapy… I work in a very busy restaurant in Manhattan NY, and definitely helps to decompress the stress… Also is how I decided to start my side hustle… no that chefs don’t know how to sharpen their knives, what I noticed is just the lack of time left…. Another great video mate! If ever visit NYC, the scotch are on me…. 🤙🏽🤙🏽🤙🏽
I definitely understand the time thing for many chefs, especially out there in NYC where you are at, I can only imagine the insane hustle! For this particular one though, it's a special private school for kids with severe learning disabilities, one that used to be booming with 100+ students that live on campus. COVID kinda took care of that and now we are struggling to have 22 total students. He definitely has time to sharpen, I catch him sitting many times just BS'ing lol.. In all fairness though, we do have a Norton IM313 oil tone system, but it hasn't been touched in literally 15 years I was told. I appreciate the offer! The wife and I actually want to make it that way, we will have to check it out!
I love this 3000 and the Fukami 3000. They do an amazing job. As far as Shapton vs. these, that'd be a tough call. For the money vs performance, these ALTSTONE would be my choice all day long, but endless cash? Probably Shapton AND these lol
lol, that's perfectly fine, it's more of just a saying here, not really giving it a gender so to speak. It's kind of like when Scott on the Kentucky Ballistics channel talks about firearm recoil after firing sand says "She be kickin" to indicate the hard felt recoil. 😀

Thank you! I love to research things, and I love sharpening stones and sharpening knives, so I always try and learn as much as possible.

My friend I don't have a 3000. I thought about ordering one. Do you like them as good as a shapton? Because I know you know what your talking about.
