Crispy Veg Chilli Fry
Cauliflower ½ cup
Broccoli ½ cup
Baby corn ½ cup
Onions ½ cup
Carrot ½ cup
Capsicum ½ cup
Refined flour 3 tbsp
Cornflour 4 tbsp
Black pepper pwd 1 tbsp
Oil 3 tbsp & for deep frying
Green chillies 1 tbsp
Garlic 2 tbsp
Ginger 1 tbsp
Red chilli sauce 2 tbsp
Soya sauce 1 tbsp
Vinegar 1 tbsp
Tomato ketchup 2 tbsp
Spring onion 3 tbsp
Salt as per taste
Water as required
Blanch cauliflower florets, broccoli florets and keep it aside.
Cut the vegetables as shown in the video.
Take a bowl, add blanched veggies, baby corn, onion, capsicum & carrots.
Add salt, pepper and toss them well. Keep aside to marinate for a few mins.
Take another bowl, add refined flour, cornflour, salt, black pepper, red chilli pwd and mix it.
Now add marinated vegetables and toss them well.
Sprinkle some water, add some cornflour, mix them till it gets evenly coated.
Heat oil in a pan for frying and deep fry all vegetables until crisp. Keep it aside.
Heat a wok, add oil, chopped garlic and saute for a few seconds.
Then add chopped ginger, chopped green chilli and cook for a while.
Add red chilli sauce, soya sauce, vinegar, ketchup and some water.
Add salt, black pepper and mix well. Then add some spring onions.
Lastly add fried vegetables and toss them well.
Garnish with spring onion greens and serve hot.
