Scrumptious Vegan Carrot Cake

    A tantalizing and scrumptious vegan carrot cake, that's very easy to make and tastes just as much.
    Cake Ingredients :
    240 ml Soy Milk
    210 gms Self-Raising Flour
    1/4 Cup of Almond Flour
    200 gms Castor Sugar
    150 gms Grated Carrots
    1/2 Tsp Bicarbonate of Soda
    1/2 Tsp Baking Powder
    1 Tsp Cardamom
    1 1/2 Tsp Cinnamon
    1/2 Tsp Nutmeg
    Zest from 1 Lemon
    60 ml Sunflower Oil
    Method :
    - In a bowl sift the self-raising flour
    - Sift into the bowl 1/4 Cup of Almond Flour
    - Sift in 1 cup of Castor Sugar
    - Add 1 1/2 Tsp of Cinnamon Powder
    - Add 1/2 Tsp Baking Powder, 1/2 Tsp of Baking Soda, 1/2 Tsp Nutmeg, 1 Tsp Cardamom powder
    - Add the Zest of the 1 lemon, that's about 1 Tbs of Lemon Zest
    - Whisk in all the ingredients together
    - To turn Soy Milk into butter milk, add 1 Tbs of Apple Cider Vinegar, whisk it in and let it rest for 15 minutes before using it.
    - Add 60 ml of Sunflower Oil into the Buttermilk
    - Add the wet ingredients into the bowl of dry ingredients and mix it well
    - Fold in 150 gms of the Grated Carrots into the bowl and fold it in well
    - When ready pour it out into the two baking tins
    - Place the two baking tins in pre-heated over at 180° for between 25-30 minutes
    - When ready use a cake tester to check for readiness
    - Let the cakes cool down ... prepare the Buttercream or Frosting for the cake
    Buttercream Or Frosting:
    Ingredients
    200 gms Vegan Butter of Choice
    200 gms Icing Sugar
    Zest from 1-2 Pink Grapefruits
    40 ml Water
    1/4 Cup of Almond Flour
    Method:
    - Sift the Icing sugar into your mixing bowl
    - Add the zest of the Grapefruit
    - Add coconut cream as a substitute and it can also make it fluffier
    - Mix ingredients well
    - When ready put the cream on the cake and layer it, then add the second cake and add more cream and spread it completely on the top of the cake.
    - You can store the cake in the fridge for unto 3 days
    - Serve your Scrumptious Vegan Carrot Cake with some Tea or Coffee ....:)
