I just do mine in a large frying pan with peas and mushrooms and add the roughly chopped onions much later in the cooking process to get that authentic crispness to the onion. It is one of my favourite dishes though, just like our Chineses the take-away does it. :)
Great recipe but why would you leave the lid off the slow cooker for so long while you are shredding it? So much heat lost which can only make it take longer to come to temp., again.... I'm still learning with my slow cooker but thought one of the cardinal rules was to resist the inclination to lift the lid and stir it for the same reason as before.

JUST A HINT ... if your slow cooker runs very slow like mine( I was finding I was coming home from work after 8 hr's and my dinner wasnt cooked ) add hot liquid and defrost your veg the night before add them at room temperature ... you will come home to a hot meal rather than cold.

Yes if that’s what you prefer. It would just be chicken chunks and not shredded or pulled chicken xx
