who knew croissants were so hard to make.. i mostly captured myself which was the relatively "easy work" but hes doing all the hard stuff laminating etc 🥹

nails was an oversight on my part but everything else is professional & according to food safety standards : ) a large number of michelin starred restaurants and established pastry bakeries don't use gloves nor hairnets as well which can be seen in open kitchens or online vids! i was also washing my hands at a VERY high frequency that day (ie. before & after every changing task) which is arguably cleaner than using gloves so can assure hygiene is not an issue!

unfortunately I am just an amateur stag and don’t know the details ;( we put them in early afternoon and take them out morning around 6-6.30am!
