- i'm at home croissanterie often and help with things here and there (rolling pastries, helping front of house) but have never helped an entire day so i decided to be a stag for a day to experience what a day in the life of ben/a pastry chef is like! (& yes we pronounce stag wrong on purpose in the video).
this was so much fun & i got to do so many things! maybe if i get to keep living this content creator life, i'll come stag here more often. do you think ben will let me laminate eventually? 👀

Work as baker really though, but work with partner or firends make delightful. But little suggestion if you making dough, you should have short nails, because it will make contamination to the dough or whatever bread/pastry you make
Please don’t stop doing making these videos; it’s genuinely so inspiring and nice to see what goes behind the scenes and how hard you all work 🥰

who knew croissants were so hard to make.. i mostly captured myself which was the relatively "easy work" but hes doing all the hard stuff laminating etc 🥹
So many food safety and hygiene standards being broken in one video 🫣
nails was an oversight on my part but everything else is professional & according to food safety standards : ) a large number of michelin starred restaurants and established pastry bakeries don't use gloves nor hairnets as well which can be seen in open kitchens or online vids! i was also washing my hands at a VERY high frequency that day (ie. before & after every changing task) which is arguably cleaner than using gloves so can assure hygiene is not an issue!
ahhh i really love this kind of videos, it makes me want to learn how to bake and have a cafe in the future too

unfortunately I am just an amateur stag and don’t know the details ;( we put them in early afternoon and take them out morning around 6-6.30am!
