This is more Carne Deshebrada than Barbacoa. Barbacoa is the entire head of a steer wrapped in burlap and cooked overnight in a pit in the ground. Nevertheless, it did look delicious. I’ve been looking for a deshebrada recipe you can make in the Instan Pot. Will definitely try this. How you are able to toast the chiles and fry the tortillas without melting your nails is impressive!

I smoke the roasts first in my wood smoker for about 2 hrs then slow cook it in the pot after. Then follow this recipe.
