1/2 Onion
2 Cloves Garlic
2 Bay leaves
1.5 Tbsp Salt

I searched through several videos of cachete de res recipes and this is the only one that looks like what we are used to- this was incredibly easy to make and they turned out fantastic. You need to try adding some liquid smoke, just add about 5 drops into 2 Tbls. of water then just pour it over the meat. It gives it a nice smoky flavor but still has that good barbacoa taste. Walmart carries it for about 2 bucks, also HEB for those in Texas

I unfortunately cannot find anyone in my region that carries beef cheek, I really want to try this recipe.
What part of the country do you live in??
I roast my beef cheek on my homemade Santa Maria grill up high for added flavor with just salt and black pepper.
Then into a cast iron Dutch oven covered and into an oven at 250F.
I seen the seasonings were only salt and bay leaves garlic and onion? Any broth or water? How much?? Moving to three rivers in sept !! Nice

I am trying this today, my crockpot only lets me do 6 hrs on high setting and 8 to 10 on low, I guess I'll just have to keep an eye on it
If you will be there, do the 6 and start it back up for 2 more. The beef cheek tightens up pushing out moisture right before it gets soft so 8 hrs is crucial. You got this!
Can you use this same recipe with chuck instead of cheek? Do I have to change anything?
Great question. Chuck isn't going to have enough fat to last the long haul and will dry out. Maybe reduce cooking time by half. The main problem is the flavor and texture will never be the same. Cheek meat is what makes Barbacoa what it is. Juicy, sticky, and hearty!

You can try but it may come out dry. The fattier the cut the butter.
How long should I cook in crock pot, if doing on low for about 2 1/2 lbs
I've never done low. Lol! On High takes 8 hrs. Did you need more than 8 hours? It may take 10-12 hours on low. You will know when the meat is fork tender.

what other cuts can work besides cheek?
You can try a fatty chuck roast, but the flavor really comes from the cheek. Other than that many times you will find tongue in there as well.

Salt Pepper Oil Wood Fire. Nothing else to add. Tip: The longer you let it rest the more tender it gets.

so... you don't need chiles? since i can't find any ancho, guajillo or anything mexican chiles here in indonesia....
No chiles in the recipe. Chile is for garnishing onto tacos when serving if one likes. I use serrano, onion, garlic, tomato, cilantro for my salsa (salt to taste). Stew them in a pot and blend smooth.

So barbaroua is beef . I always wanted to make the meat so tender but it wasn’t so tender in the crock pot, I bought chuck beef.

Help me understand why some Mexican videos the have sauce and others do not? Learning...
Have sauce?? Not sure what you mean. When Barbacoa is finished cooking you take it out of the rendered fat and shred it so you can make tacos. Hope this helps!
@@StayHomeEatGreat Some videos from Mexican cooks will make Barbacoa then later add a chili sauce made from dried chilis. That is why I got confused and thought I would ask. I have only seen two videos were they make it without sauce. 😊

Some people use tongue but beef cheek is "the" authentic flavor.
Man, thanks for the recipe n I made it exactly, but it wasn’t for me or my family, I had to throw it out. Too much fat. It’s not for us. We couldn’t eat it.
You have to remove the fat before you can eat, that's for sure. I guess it's not for everyone. Maybe try my Fish Tacos, Green Enchiladas, or Carnitas recipes. Thanks.

Looks killer. My cardiologist says no. I take a hunk of tri tip and smoke it for an hour and a half or so, then into a covered cast iron in the oven for 7 hours at 225. Shreds really easily. Still not cardiologist approved, but hey, good food is good for the soul.
