Friends, also feel free to swap the ground beef with ground chicken or ground turkey. Lots of options! Can't wait to hear what you think of it! xo - Lisa
I made this tonight for my wife. She told me to add it to my rotation, and she's a picky eater. Great recipe! I used a thick slice of prosciutto to my oil, vegetable stock (I was out of beef), added mushrooms and red wine, sherry vinegar, red wine vinegar, and balsamic and used arborio rice that I toasted in olive oil before boiling. Froze some and made some lunches for work.
Hi Lisa, I'm recovering from double mastectomy 2 weeks ago, and my girlfriend brought us stuffed pepper soup last night. My husband and I loved it. What a surprise to wake up today and see this video and recipe. I'm definitely making this and freezing it for upcoming chemo treatment days. Thank you! I can't WAIT for your cookbook. Much love, Lori
This was such a hit I had to make a second pot! We used ground elk instead of beef, and I added some grated zucchini (only because I have so much of it). I roasted my own tomatoes and made my own tomato sauce, so every veggie in the recipe came from my own garden. I had been planning on making stuffed peppers, but I'd rather have the soup, so thank you for the great, timely recipe.
I made this tonight for my mom and I and it was a definite winner! So easy to put together and extremely hearty! I just subbed in ground turkey breast for beef and brown basmati rice for added nutrition. Your recipes never let me down, so thank you. I pray that you are safe in CA right now...
Well, the husband loved it! Said I should add it to the rotation. Quite earnestly, I add. I used a bag of frozen tri-colored peppers (chopped up) because that’s what I had on hand, and it worked well.
Wow! This soup recipe is a keeper!! Made it this evening after traveling home from a weekend in VT; easy, and delicious. I doubled the green and red peppers, added parsley; used veg stock as I was out of beef. Its always fun to try one of your recipes, Lisa!
This is a great recipe and it’s infinitely variable. You can literally mix and match everything. It’s good for getting rid of aging ingredients too. Freezes well
Here's a tip for you, when I get bulk gr. turkey(or beef) I freeze some already cooked. I also make extra rice and freeze it for fried rice. I have a big bag of frozen onions and peppers too. I bet I could have this soup made in 10 minutes if I defrosted the meat in the microwave.
my wife makes stuffed peppers, we freeze them to pull out for a quick meal, add some peas and carrots with some beef broth, chop up the stuffed pepper, and its done in a couple minutes!
This recipe is phenomenal! Thank you. Half is in the freezer and the other half I am enjoying for lunches. Very easy to follow and put together. Your videos have helped me enjoy healthier foods and your demeanor is so calming and peaceful. I so appreciate your channel.❤
Just made this today & it is fantastic. One thing I did a bit different is that I turned it into a crop pot recipe & add uncooked rice 30 mins before serving. I did have to double the beef broth but man it sure came out good.
I'm retired but used to work for the federal government. Our facility had a cafeteria that made stuffed green pepper soup. They always had leftovers so we'd have the soup a few days in a row. This soup is even better if it sits a day or so. Just like beef vegetable soup. This has me now geared up to making a pot soon!
Just finished enjoying a second bowl. It's soooo good. I had a jar of fire roasted bell pepper I had brought by accident thinking I was buying something else, so I added those also in the soup. Thank you for the recipe. It's 23 degrees outside and I'm warm and comfy enjoying my soup while watching the world cup.
Oh my gosh girl, thank you for this!! Stuffed peppers are my favorite comfort food in the winter, and I love the idea of having a one pot version of it. I will be trying this on the next snowy day, along with binge watching my favorite programs! 😀
I made this today. What a great soup!! Thanks for sharing your recipe!! I can taste all spices, the vegetables, tomatoes, when you can tastes all the mixture, I consider it a great soup. Nice thickness too. This is the next day. My family come for a visit. I served this soup. "Mom" doesn't like veggies and is real picky. She took her first taste and about hollered, "This is good!!" After we ate, my Son devided the soup so everyone would have left overs. I tell you, you really created a great soup! Thank you!
I have made this 3 times (with ground turkey) and LOVE it. Currently down with covid and happen to have made a huge pot of this soup just before that. Worked out perfect for me. I will be eating this for a couple of days while I am in isolation :)
Absolutely make double batch freeze half for winter when you come in from the cold pop it in the microwave and have hot comfort soup . I have spaghetti sauce for 2 and vegetable soup Chile in freezer , took very large ham for Christmas, ground 2 pounds froze for ham salad sandwiches ,to night made omelets with the ham frozen onion and peppers ,took 2 pounds cubed for later froze hambone for bean soup later.
I made this soup yesterday but as I didn't have any beef to put in it I just put a couple of handfuls of macaroni in it instead. I wanted some more of it today, so fried some lardons until golden and crispy and threw them in too, and the result was really good. I am imagining that it would be great with some fried chorizo as well, but next time I make it I will try with the beef as per the recipe. Thank for a lovely, easy, and very customisable recipe 😋
I've been making this soup for years! One of 2 favorites! Creamy potato and carrot is mynother favorite. Potato and leek is my 3rd favorite. Tip roast the peppers in the oven for even more flavor and the soup cooks quicker. I also add a bit of brown sugar
Creamy potato and carrots sound good. My mother always thought she made the best potato soup, but it was always watery and not very good. I love potato soup, but still don't have the heart to tell her how much I dreaded her potato soup.
@@shellisspace Lol, good advice, at 80 it's just better left unsaid! 😀 There is a local chain restaurant here in Pittsburgh that has the most creamy delicious potato soup on Wednesday (Salad Bar). If you would like to share your recipe, I will give it a try. However, I will be trying the stuffed pepper soup first...
So, I made this exactly as instructed. I wanted to freeze some for later, but the hubby wouldn't let me. He wanted it for dinner the next night again and for lunches. I guess I'm making more in a few weeks and freezing right away so I have some in the freezer for a fast meal. Yummy, just like everything else I've made from your sight. I can't wait for my book to arrive.
Happy to hear you both are loving this stuffed pepper soup! It's definitely a great recipe to have stocked in the freezer 😉 And yes! Just a few more months away from the cookbook!
I made this on Monday, it’s Wednesday and my family is asking me to make it again please. We had leftovers for a total of 27 hours. Wow. Sooooo yummy! Thank you for for the recipe…I’ll never have to stuff another pepper as long as I live.
I have premade quinoa, and white rice ... I have all the ingredients ready... I want to make this tomorrow because we just got several inches of snow tonight. This looks so yummy 😋 thank you
I made this soup following the directions with one exception. I added 1 - 1/2 Tsp Worcestershire sauce. Excellent recipe. Next time I'll just use 3 gr. bell peppers for an added kick. Sooo good. Much easier than making stuffed peppers.
Made this soup today (Jan 10, 2023). Excellent. Thank you very much for the video and recipe. I was a little reluctant about the rice, but you were right in that it added a good heartiness to the dish.

I have been making this soup for over 20 years and have shared the recipe countless times (even while shopping) ! Always a favorite! I do not use fire roasted tomatoes as no one in the family likes it!
Oh my! You got, my mouth watering after seeing this video. I, have got to try this recipe. It, looks absolutely delicious! Thanks, for sharing it with us!
I just made this turned out awesome. The beef broth I bought has 4 cups, so I did 2 cups for the soup and use the other 2 cups for the rice, so no waste.
I will have to try this soup. I frequently make a dish using these ingredients, but in different proportions, resulting in what you might call Spanish rice with ground meat. I like to use green, orange, and yellow bell pepper, celery, and I also use half ground beef, half ground pork. Just enough stock to cook the rice and only half a can of tomatoes. Great served with some salsa on top. Perhaps this would be similar to what Louisianans know as jambalaya.
Lisa, it's officially in my soup pot! 😊 I saw this come through in my email, had the ingredients on hand and pulled it together. It will be ready in about 15 minutes and I can't wait to try it. I've always loved stuffed bell peppers, and this is even better! Can't wait to try it. Stuffed peppers always make me think of stuffed cabbage rolls, another of my favorites. I'm hoping you have a soup recipe for that, as well. Thank you!
Oh! My! Gosh! You knocked another one out of the park, Lisa! This is now on my menu for this weekend! It looks so yummy my tummy is growling! Thanks for another awesome video!

Man man man. This was so good. I repurposed it 3 times. We made stuffed bell pepper soup over baked potato. We made it over tortilla chips. Yeah I know another starch but that soup hit every homey flavor I was looking for. Ty
This is nearly my deconstructed cabbage roll in a bowl recipe! So may I suggest if you want to change it up the next day, take some cabbage and pan sear it until it gets some color. This recipe elicited an endless stream of nom nom noms from my husband! I used a bag of frozen tri-color peppers, and it worked perfectly (they chop easily if you let them thaw on the counter for just a few minutes). I had extra leftover brown rice, so I added extra broth to compensate. More soup for me!
I made this last night. I LOVED IT! I did 50% ground beef/Italian sausage, the sausage kicked it up a bit. I thought about putting shrimp in it but decided to wait. Next time.
Your stuffed peppers are on my meal rotation and it’s one of our favorites! Everyone gets so excited.. so this is the perfect soup for the cooler weather ahead!.. Our favorite soup is Caldo Tlalpeno.. it’s a Mexican soup (we live in South Texas) but I’m thinking this one will make it to the top of our favs
I can't wait to go grocery shopping for the ingredients to make it. It looks delicious and from the comments, it sounds like everyone really likes, loves, and enjoys it! Bon Appetit!
Delicious! I made this a couple of nights ago for me and my mom and we both liked it. Lots of flavor and very filling. I like these recipes where I can control the salt because my mom has a heart condition so that's important. I've never used fire-roasted tomatoes before but the store had them in organic with reduced salt so that was a plus. Definitely keeping this soup in my book for future use. BTW, it really helps to start the water boiling for the rice at the same time you start the soup in the main pot. I used actual "slow" rice, not Minute Rice, and it takes time to cook.
Stuffed peppers is a family favorite! My mother makes both versions I think her methods are slightly different but the results are just the same - delicious! ❤❤❤
Thanks! I'm going to make this for the weekend! For now though, I'm making a coconut curry chicken pumpkin soup since I've already got my heart set on it and the chicken and broth is finished already. I'm looking forward to trying this recipe!
Thank you Lisa, I am trying this tonight! I have an abundance of peppers from the garden so I will be doubling this recipe to meal prep. I may add a jalapeño for some zing! Appreciate you 😊.
I make a version of this, as well as a ''stuffed cabbage soup'', almost the same ingredients just add cabbage and less bell pepper. My favorite Soups are: New England Clam Chowder and Scotch Broth. I also love Mushroom, Miso and Hot and sour soup.
I made this last night and it was delicious. I am diabetic, so I swapped out the rice for cauliflower rice and it was great (although I would have loved regular rice better, lol) Thank you.
Ok, I finally made this soup tonight and it came out delish. I pretty much followed your recipe. The only thing that was just ok was the crushed fire roasted tomatoes. They were a little too sweet for me. Next time I'll do regular crushed tomatoes instead but other than that it was very good. Thank you.
You can use the garlic peels to make into a tea, it's very beneficial for circulation. Place the peels in cup, cover with hot water and let it sit for about 10 mins, strain and drink.
Ok so I made this recipe last night for my family it was really delicious 😋. I subscribed the rice with quinoa. I can't wait till lunch time for the leftovers 😁

Thank you Lisa, I am trying this tonight! I have an abundance of peppers from the garden so I will be doubling this recipe to meal prep. I may add a jalapeño for some zing! Appreciate you 😊.
Jalapeno would be a great addition to this! Can't wait for you to try this Lucie 😉
Just had a bowl and it’s delicious! I did add additional herbs and powdered garlic. Will be making this again, thanks Lisa 😁.
I make a version of this, as well as a ''stuffed cabbage soup'', almost the same ingredients just add cabbage and less bell pepper.
My favorite Soups are: New England Clam Chowder and Scotch Broth. I also love Mushroom, Miso and Hot and sour soup.
My favorites as well
I also add corn...!!! Love it.
I made this last night and it was delicious. I am diabetic, so I swapped out the rice for cauliflower rice and it was great (although I would have loved regular rice better, lol) Thank you.
Glad this worked out great with cauliflower rice!
Ok, I finally made this soup tonight and it came out delish. I pretty much followed your recipe. The only thing that was just ok was the crushed fire roasted tomatoes. They were a little too sweet for me. Next time I'll do regular crushed tomatoes instead but other than that it was very good. Thank you.
I made this soup earlier this week and it was PHENOMENAL!!
You can use the garlic peels to make into a tea, it's very beneficial for circulation. Place the peels in cup, cover with hot water and let it sit for about 10 mins, strain and drink.
Just made this for dinner tonight it’s perfect…there is a chill in the air and it hit the spot for sure!!
Glad this soup was a hit!
I don’t normally comment but wanted to say I made this and everyone loved it! Flavor sure does remind me of the stuffed peppers my mom used to make
We love this soup...grew up with it. I like this recipe!
i made this the other day and it was absolutely delicious -will def be making it again
Holy cow!!!! I just made this. Absolutely INCREDIBLE. Thank you so much!!!!
Yay! Glad you loved it Latisha!
I substituted the beef for tuna since I had no other meat in the house and it didn’t work out so well. So much for creativity!
I’m making this right now with extra meat in it. It already tastes fantastic and it’s so easy! I made a loaf of bread to go with it. Can’t wait!
This is by far the best recipe I've ever seen and I'm totally gonna cook your version soon I just need the fire roasted tomatoes and some thyme 😀
Ok so I made this recipe last night for my family it was really delicious 😋. I subscribed the rice with quinoa. I can't wait till lunch time for the leftovers 😁
Thanks!
