I use the top rack because the heat rises and the heat is concentrated on the surface. Can’t wait for the next harvest.

Can't find dried peppers where I live ,so I'm smoking my own in the same smoker, just putting them in whole and using alder woodchips

Good video, I think you want to leave the oven door open when drying. By closing it, the moisture is kept in and ultimately lengthens the total time. Good job and way to stick with it until the end! !! !!!

We are definitely smoking again this year so I will try your tip of leaving the door open!

"chih-POTE-lay". You can't legally make a video about a subject unless you can pronounce it. They put you in federal prison for decades for things like that.
Serious, though, have you ever heard of "Chipotle Capones"? The seeds and ribs are removed before smoking to make a chipotle with all the same flavor as a Chipotle Morita but with less heat.
Capones are the third type of chipotle -- along with Moritas and Secos -- but are dried only to the Morita stage so they are still a little flexible like Anchos.
The problem with your batch is that they were not smoked long enough to make Secos but they were "dehydrated" so fast that they were stiff as Secos but had the finish of Moritas. Which were you trying to produce?

It is taking so long because of the smoker that you are using, it does not seal well. If you use a pellet grill or end box unit @200 it should take 5 hours.

Can you cut them in half to smoke or is your way the only way?

You absolutely can cut them in half to smoke, it will cut down on the drying time.
