Besides gloves, I learned to use safety glasses too when chopping hot peppers.

I just saw this video, and it is just what I needed. Hi! I'm from New Zealand, and I grow chillis every year, although still in the "experimental stage". I have had most success with Cayenne, Jalapenos, and Hungarian Hot Wax. Last year I smoked a mixture of Jalapenos and Cayennes with the idea of making a smokey hot sauce. I used the same recipe from the year before and was a bit surprised when I could only get 750ml of sauce when I used to get 1,500ml. Of course, it was because the moisture came out of the chillis. So, sauce made, and I thought after a couple of weeks I should try it. OMG! This sauce nearly blew my head off! Extremely strong, but a gorgeous fruity taste. Thanks for the video Bro.

My purple cayennes are FINALLY coming along nicely. Going to try doing this with them and make some powder! Only problem is keeping Nanny from picking them while they're still purple. I'll wait until they turn red hopefully 🤪

The flavor of purple cayenne peppers is better when they turn red. They're still green-ish while purple. They're really pretty though

Great info, thank you. The music drowns out your voice though

Does it rehydrate if you cook with it?? I never thought to do that. I don’t like too much heat, just a little..

You can rehydrate them and cook with them that way. I like to throw one or two in a pot of soup just to give it a little flavor and warmth then take out. Kind of used like a bay leaf.

@@virginiagraceliving I am going to try that if I get anymore. I had enough peppers to make one little jelly jar of pepper flakes. I couldn’t get them to crush in the bag as well as yours did. I dried them for a day, but still must have had too much moisture. I put them in the food processor as a last resort.

@@max15398 mine took quite awhile to get that dry. Sounds like you came up with a good solution though!

@@virginiagraceliving I had a few other peppers I threw in with the cayenne, I wonder if that made a difference. They were mystery peppers, Serrano possibly.

    • @virginiagraceliving

@@max15398 could be. Cayennes are thin walled peppers so they dry out a little easier.

Don't worry about the chickens turning into ducks. I'm convinced mine love the rain or are too dumb to stay dry
