    I wash my butter several times in ice water rinsing well keeps the sweet flavor in your butter. We raise 50 meat chickens each year, the key is to keep their protein up very high, rotate their pastures, and keep them COOL because they die quickly in heat. Raising meat chickens is quick, since they're mature at 6-8 weeks old. We feed raw meats to them that are high in protein along with their grains and we pasture them as well. We feed organically and each chicken dress out at 5-6 lbs.

    Wash your butter with cold water then salt it! Makes delicious butter!

    Good morning! I live in a small rule town of approximately 5000 in South Arkansas. I guess I am what you would call an urban homesteader lol,! We have a garden and we also have chickens. Dehydrate, freeze, can, and try to learn something new everyday. We have kept chickens for about 15 years. Just found your channel. Take care.

    If you rinse the butter in cold water until it runs clear then salt it it tastes better and will keep longer.

    I have backyard chickens as well. This is my 1st year. I don't have a chicken run or tractor, so I free range them each day after lunch until they go back in. We have an 8.5 month old puppy who is border collie/pyrenees. We haven't trusted her to be free while the chickens are out yet. I'm so new to this all.

    In Austria we make sauerkraut in october. We add salt, juniper berry, caraway and bay leaves. Then we press with our hands the "kraut" until the cale is covered of the cale juice. Then we cover the sauerkraut with cale leaves and burden it with stones.(in the fermention pot)

    Welcome to Missouri 😊 My husband and I were born and raised here and live in the north central part of the state. I just recently found your channel and have so enjoyed watching! I was raised helping my mom and her parents raise and butcher cornish cross chickens. They are a fast growing chicken ready to butcher between 6 to 8 weeks. I now raise them for myself, my mom and sister and we will be processing them this weekend.

    Welcome to Missouri!!! Jefferson City area here!! We started with chickens in 2020, we both grew up on the farm and just got back to the country in 2018. We grow our own beef, pork, chickens, eggs and grow a rather large garden. I am canning today as I watch you, the garden is in abundance and a busy time of the year. It gives me happiness to see the pantry fill up with food that we have produced and grown. The best to your family from mine.

    Your butter is that colour and it smells / tastes “cheesy” because you’re not washing all of the buttermilk out. If you washed it in several changes of cold (even iced) water, it would be paler (a very pale cream colour) and last longer, too, because the whey / buttermilk will make it go “off” sooner. Probably doesn’t matter if you’re using it up quickly, but maybe worth trying if you’re making large batches. Also, I use a Ninja blender too, and I let mine run until the butter is just one lump, rather than choosing to mix it in a cheesecloth and sieve as you did - that, too, will separate a lot of the buttermilk from the solids.

    I was raised calling the liquid that separates from the butter buttermilk. It's wonderful to use making buttermilk pancakes and biscuits! After you drain it off of the butter, you need to rinse your butter in very cold water and work it with butter paddles or the back of a big wooden spoon. Keep draining the rinse water and rinsing again until the rinse water stays clear. Then when you store !your butter it won't take on bad tastes, it stays sweet and good! I have 7 hens, 3 bullets and 7 chicks being raised by my Broody Dorking hen - her second batch of chicks this year and she's about7 years old!! She's amazing!

    I LOVE chocolate zucchini cake. I've never added any icing to it, but I'm sure it's good. Have you ever made the chocolate zucchini bread? It's one of the first things I have to make every year with my first zucchini. lol

    How did your sauerkraut do? I use crocks similar to yours with the weights. I cut mine by hand because I like a larger texture. The recipe I have followed for years now says the water should build up so you don’t have to add much. I have never found that to be the case. I also add large leaves from the cabbage on top before adding the weights. It helps a lot. I also like very tart sauerkraut so I ferment for 6 full weeks and then I can it. It works great.

    I love Claire de Lune! And sauerkraut! I have been making my own kraut for a couple years now and it’s still a bit mysterious. Sometimes it turns out amazing and sometimes not so great.     Love the cake recipe. Make sure your cabinets are able to hold the extra weight of the canned goods. I’m sure their fine but just in case.

    The salsa recipe I can also has apple cider vinegar in it and we can't taste it at all. But I do let it sit a month or so before I let anyone crack one open. Your chocolate zucchini cake looks delicious. YUM! Congratulations on the new baby!

    I just found you and I really enjoyed this video! My children are all grown and gone but we have about 14 chickens out back and a garden that suits my husband and I just fine. I would love to have access to fresh, raw dairy to make my own butter but so far, I haven't found a reliable source. Thank you for sharing! I'll have to go check your other videos out.

    Another wonderful video, I really appreciate how you are positive about the rain, especially since we’ve had soooo much rain the past few weeks here in Missouri. It’s refreshing to hear 🙂 As far as chickens go, we have 8 hens (Golden Comets, Dominiques, and Isas) and a wonderful Rhode Island Red rooster. Backyard chickens are so great!
    Wow, that chocolate cake looks so delicious! I’m going to try that, I’ve made chocolate zucchini cake a few times this summer but this looks next level! I made sourdough banana bread for tomorrow’s breakfast, but I’ve definitely served chocolate zucchini cake for breakfast before, to my kids’ delight 🤣😂
