    Max is correct. If you add anything to the sandwich beyond cheese, it's a melt. This is the immutable law.

      I don't know. If it bacon or a tomato, I still think it's a grilled cheese. Anything more it"s a melt.

    Max is spot on. The other flaw I noticed was not cutting the sandwiches on an angle. Triangles taste better, look better, and it's against the law to not cut on an angle if you have kids or have raised kids. It's a fact. lol Great vid guys! Thank You!

      I think the rule should be if there's too much math involved to figure out the percentage of cheese content in your grilled cheese, then it's not really a grilled cheese.

    Nobody watches this channel for max. If it has cheese and it’s grilled, it’s a grilled cheese. Shattering boundaries is what I like most about Sam’s cooking. “When you’re older…..” Hahaha. I tell my kids this all the time.

    Sorry Sam - I gotta go with Max on this. Those are "melts". Very unique versions of melts, but melts none the less. The carnitas version looks amazing. I'm going to have to try that one soon. Thanks.

    Max is right, you can add things to a grilled cheese but as soon as the cheese isnt the main factor it becomes something else.

      I would argue it's still a grilled cheese until you add any substantial meat - at that point the meat is the star. Carnitas and tuna turn a grilled cheese into a melt. Veggies only? Still a grilled cheese. Bits of bacon? Probably still a grilled cheese.

      Grilled Cheeses are all or nearly all cheese/combinations of different cheeses. But Sam, even if the non-cheese ingredients don’t make it a melt (they do), those non-triangle cuts definitely rule out grilled cheese. 😊 Now I’m probably not winning a knife…😢

    You can add condiments like diced jalapeno, caramelized onion or bacon jam and it's still a grilled cheese. If you add tomato, eggs, meat, or anything heavy like that it becomes a melt.

    I love to make a good ol' traditional grilled cheese on the flattop, but I like to cook a little shredded cheese on the outside as well, which just puts it over the top.

    March: Brat Burrito! I stumbled on these on my own once by making a flour tortilla cheese crisp and rolling it around a brat. I ate mine with just salsa. I afterwards found this was a thing and people were adding sautéed onions and peppers and topping them with guacamole, sour cream etc. I'd be interested to see what STCG would do with this!

      I like this idea! He could use mashed potatoes, rolled thin on and under parchement paper, and he puts them on the flat top to brown and turn into taco shells, then add the filling and make a sauce with Guiness.

    My son and I love watching your videos. He was recently diagnosed with celiac disease. He’s been down in the dumps about a lot of his favorite foods that he will miss. But we are learning to discover what’s possible. I don’t expect you to do a specific episode but we explore ways to make what you do without gluten.

      Melted cheese in a pan (or oven) until crispy is a great start to taco shell or pizza base, wonton.
      Chaffle which is .5 cup shredded cheese and 1 egg cooked in small dash waffle maker (makes 2 dont overfil) is your new bun or waffle, I usually cook in pan and just make a pancake.
      Crispy bacon or pork rinds are your new cracker.
      Lettuce wrap anything or just eat whatever toppings in a bowl.

      I’m a celiac too. Lots of great gluten free breads out there. Look for Canyon Bakehouse in the frozen section. Very good! They have unfrozen ones too but I don’t think they’re quite as good. As for everything else, there isn’t a single thing I’ve stopped eating since my diagnosis in 2018. You can make anything gluten free if you want to! Good luck!

      My wife has Celiac. There are many options like cw76542 says. I have gone almost gluten free myself just due to cooking meals together and don't mind the change at all. Good luck!

    With Mardi Gras coming up it's time to do a Seafood Gumbo. I noticed you haven't done one yet and they are somewhat easy.
    Given your location, I'm sure you have access to excellent fresh seafood.

    A grilled cheese is cheese (more the better), bread. Anything else becomes a different grilled sandwich (tuna would be grilled tuna and cheese sandwich, and so on)

    I still remember the legendary grilled cheese rant on the grilled cheese reddit, by a guy who very angrily pointed out how anything with more than just bread, cheese, and optionally butter, is not a grilled cheese but rather a "melt".
    Not saying Sam is right or wrong, just loved that old rant and this made me think of it.

    Sam, have you ever made a grill cheese with cheese inside and out? I like to butter the bread and then take shredded cheese (cheddar mainly) and press it into the butter. Then grill and get that crispy little burnt cheese on the outside.

    Literally just eaten a grilled cheese sandwich with tuna & green onion (F… Max!).
    As I ate I glanced over my left shoulder to look through the open door into my garden and while thinking how gorgeous the sandwich was I was greeted by my little dog dropping his lunch for me to deal with !

    March: Brisket and Gravy. It’s biscuits and gravy but use leftover brisket instead of breakfast sausage. I usually make my own biscuits and use bacon grease or beef tallow and throw in a little fried sage and rosemary in the biscuit dough.

    March: Make a shakshuka. Tomato poached eggs. It can be made with anything, but I use fire roasted tomatoes, carrots, onions, celery, smoked paprika, regular paprika, cayenne, my BFF blend, whatever beans I feel like making (From dry, natch) and eggs I collect from my chickens. Easy, cheap and tasty.

    Definitely team Max on this. Adding ingredients to a grilled cheese is fine as long as the cheese is still 75% of the ingredients between the bread slices.

    March: Sam! my mom used to make us this dish when I was growing up I called “green spaghetti”. It’s basically a panko breaded/fried chicken schnitzel with spaghetti tossed in pesto,garlic and topped with Parmesan cheese. Killer combo and always made me feel at home. Much love 🤙🏻🍀

    March: Cornish Pasty! Like a British calzone, it's a portable meat pie typically filled with skirt steak, potato, onions, and carrots (or other root veggies). Maybe some parsley and/or other herbs for depth.

    The egg-cuber works best when you put a hot and just peeled egg in there. Then let it cool in the fridge. A bigger egg helps too

    Grew up in Phoenix, so SD was 'kinda our backyard. Spent A LOT time of hanging in San Diego. Also was a huge fan of Samsburgers. Alas, career took me to the east coast and now every time I watch Sam, a little tear squirts out of my eye as I miss going to Little Italy and Sam's joints...

    Agreeing with max on this one. After you know who tried to make another grilled cheese and failed yet again,I've been thinking the same thing. Once it becomes more than just cheese and bread,it's a melt, cheesesteak, etc.

    March: Variations of Picadillo. There's Cuban, Mexican, Filipino, Dominican, Costa Rican, and other regional variations. They're all similar yet different. They all start from ground beef or chopped meat simmered in tomato sauce but additional ingredients vary by region. I really like Cuban, which has fried potatoes, raisins, capers, green olives. Some variations are served with egg on top, used as stuffing in pastries, or served with rice or tortillas.

    Sam, I love a grilled cheese sandwich and these are looking good to me. I will try them.... but I suggest you look up one of the many recipes for Welsh Rarebit (unless you already have). In my opinion the best thing you can have when cheese meets bread. Keep up the good work and hello from Wales 😄

    It’s all about ratio, some bread wants a lot of cheese and some bread likes thin.

    March: RATATOUILLE!
    In a pan heat up evoo and throw in onion and garlic, add in whole cherry tomatoes and sliced red bell peppers. Let fry up a little. Add in fresh thyme, rosemary, sage, salt, pepper, umami powder, chili flakes. Once fully cooked, add into blender and add about a quarter cup of water, blend. Slice eggplant, zucchini, squash, and tomatoes. I don't have a round dish so I just use a quarter baking sheet. Add tomato sauce to bottom of the baking sheet, then layer on sliced veggies. I then blend in my nutribullet some more thyme, rosemary, sage. To that mix I add cut minced garlic, olive oil, salt and pepper. Brush the herb and oil mixture over the veggies. Cover with foil and bake for 20 min in a 375 degree oven. Take out of oven, remove foil, then sprinkle on some nutritional yeast over veggies, gives it a parmesan crust sort of feel. Bake uncovered for another 10 minutes. Did you notice this a plant based dish ;) Enjoy!

    As a dairy farmer, to me, grilled cheese is bread and cheese. Possibly some flavoring. But cheese is the primary ingredient. when you add other things, you are getting into things similar to a patty melt. Just a great sandwich which includes cheese as an ingredient.

      The fun of a grilled cheese is trying to find different combinations of bread and cheese. (Mayo/ butter for toasting.) my go to is sourdough bread/ butter, and a triple cheddar combo . Usually I will add some Garlic/pepper seasoning.

    My 7 year old son is diabetic. We've gotten used to the go to's for breakfast, lunches and snacks. How about some low carb stuff that's packed with flavor!!? Love the channel and the banter between you guys 👍

      Have you tried "Dave's Killer Bread"? There are a BUNCH of varieties, nearly all are whole grain, and the 21-grain seems pretty low carb for bread. In addition...get the "thin sliced" variety of whatever type you get-- it's 60-70 calories a slice, vs. 100-110 a slice. Good luck!

      I made a PB& J using smooth peanut butter and raspberry jam on brioche bread, and had one of the cooks put it in the Panini press. It was FIRE!🔥

    Just something that I've found in my ongoing evolution of the perfect grilled cheese (and I am famous in my large family for making THE best): when using butter on the outside, melt a pat or two in the frying pan, and *then* pop in the assembled sandwich. Be generous. When turning, add another pat while your sandwich rests on your turning spatula, and then fry the other side. You will get a uniformly (ultra) crispy brown and melted sandwich every time. Extra wonderful if you use shredded cheese as opposed to sliced. We do a lot of different kinds of grilled cheese at our house, the best probably being a version utilizing leftover Swiss steak (like chicken-fried, but with diced tomatoes, onions, and green beans) on rye that was my dad's favorite. And in case anyone cares, a grilled cheese becomes a melt when the cheese is outweighed by anything else--more cheese is grilled, less cheese is a melt.
    We are staunchly in the grilled camp.

    Grilled cheese is the bread and the cheese. You can add stuff like a little butter or mayo...maybe a little bit of extra like bacon bits ( bits, not full bacon ) or onion or minor stuff. If it isn't 98% bread and cheese it's not grilled cheese, it's something else ( not sure what, but it's not a grilled cheese sandwich. Simplicity isn't bad! ) EDIT: I'd still eat these, they look delicious...but they aren't grilled cheese, they're grilled sandwiches that happen to have cheese....not the same thing

    Anything with buttered bread and sliced cheese toasted in a pan qualifies. If it has steak, short ribs, chicken, eggs, tuna, ham sliced, chopped up chiceron, and the cheese can be American, Swiss, sliced smoked Gouda, Yalsberg, Port Salut, Brest Bleu, it's all good.

    March: Sam - make a crescent roll ring. You can LITERALLY make anything into one. I like to do a philly cheesesteak ring, pulled pork ring (pulled pork, bbq sauce, pickled onion, jalapeno, optional cheese), a "dumpling" one (ground pork, onion, carrot, cabbage, with sesame seeds and whatever asian inspired sauce, but not too much), and the all classic chicken bacon broccoli (add in cream cheese mixed with ranch packet and shredded cheddar.)
    Take the crescent rolls, separate them out, but lay them in a circular fashion with the points going outward, overlapping. Place the filling in the center of the circle and then fold the points overtop. Bake at 375 for 18-20 minutes. I like to do an egg wash and sprinkling of something on top depending on what the innards are.
    You could use this for ANY thing, too. Make a taco one! Make a pizza one! Make a burger one! Make a meatloaf one! The sky is the limit!

    March: bacon cheeseburger meatloaf. It’s stuffed with cheese instead of an egg, has latticed bacon on top, with a bbq-ketchup glaze baked on top of that. Had it when I was younger and it was frickin delicious!!

    Loved the idea of adding a little sriracha to your mayo. Gonna try that the next time I make grilled tuna sandwiches…add it to the tuna and mayo mixture.

    March: Chicken Cesar salad sandwich
    -Grilled Chicken (cut into strips)
    These are typically leftovers so they go in a pan with some onion and garlic
    -Chopped Romain tossed in the Cesar dressing of choice (I prefer marzetti)
    -Toasted sourdough to mimic the crouton component
    -Shaved Parmesan cheese over the top

    Grilled cheese is just cheese. Nothing else. Also, the cheese should be hunks of Velveeta cheese from a brick of Velveeta. It melts and tastes beautifully -- Fight me. I'm standing by that.

    In our house, we have a saying. "Can you cheese it?" The answer is almost always yes. With this, I agree with Sam, anything can be turned into a grilled cheese. We do meatloaf grilled cheese (phenomenal) with our leftovers, we have done arancini grilled cheese, lasagna grilled cheese, the list goes on and on. Sorry Max, I am on Sam's side on this one!

    Sam, I agree with you. If you put sliced cheese on slices of bread, spread mayo or butter on the outside, and grill it, it's a grilled cheese. Doesn't matter if you add other ingredients.
    As for March video ideas, I think one dedicated to different deviled egg recipes would be delicious. Not only would it be delicious, but Guy fieri would hate it because he hates eggs!

    Agreed, anything grilled with cheese between bread is a Grilled Cheese no matter what additional stuffing is added. BUT, a Grilled Cheese made with square bread needs to be cut at a 45d angle.

    March: Pink Alfredo pizza with chicken and bacon. Pizza dough, mix pizza sauce with Alfredo, grilled chicken, bacon, cheese. Hell yeah!

    March: Sam, make this!
    -2.5 lbs of shrimp, scallops, or fish of your choice
    -5 limes
    -2 lemon
    -3 diced roma tomatos
    -½ small white onion, finely chopped
    -3 avocados diced
    - 1 jalapeño pepper, finely chopped
    - Approx 1 cup of fresh chopped cilantro
    -4 garlic cloves finely chopped
    -1 TBLS of olive oil
    -1/2 TBLS Salt
    -1/2 TBLS Garlic salt
    -1/2 TBLS pepper
    -Corn chips (optional)
    - Note: The goal is to have about 1 cup of juice(just enough to cover all the meat) after you juice the limes and lemons. If you don’t have enough after juicing just supplement with a little lime and or lemon juice out of the fridge.
    - Cut all the meat into cubes and soak in the lime and lemon juice overnight
    - The next day add all ingredients except the avocado stir and make sure it tastes right and then add avocado and do a final light stir.
