How to use a Presto 23-quart pressure canner

  • **I have an older pressure canner. My pressure valve is different on my canner than others. You may have one that says TOP and it is skinny and has a flat that says (TOP), that will be the side that pops up when pressure is built up. Mine is different but still works the same way. **
    In the background of many of my videos, you may hear children being children. If you hear some hollering is it from our child that is deaf. She doesn't hear herself to hear just how loud she can get!
    I have received a few comments saying my canner is set up wrong, it is not. It is a different valve.
    Welcome, Y'all to my UA-cam Channel! Today I am going to go through how to use a Presto 23-quart pressure canner. I will show you quickly what to look for and how to get started with the basics. This is my favorite canner and I use it all the time. Don't worry about being scared of it, that goes away after you use it a couple of times.     Great video. 2 extra things: 1. if you have hard water add some white vinegar to the pot to keep your jars from coming out cloudy on the outside. 2. After you put the weight on, start reducing the burner heat slowly as the pressure is going up. Makes it way easier to hit 11lbs smoothly without going way up/way down/way up/way down. I.E. at 5lbs nudge the heat back, at 8ish lbs nudge it back a little more for a soft landing at 11 not a high speed crash.

    Get a “jiggler” regulator to use instead of that 15 lb regulator that comes standard with pressure cookers...the model # is 50332...the one you want is the 3-piece regulator...it has versatility and allows you to choose to can at 5 lb or 10 lb or 15 lb...when you use the jiggler you do not pay attention to the dial gauge at all! The jiggler weight you chose to use is what your max pressure is going to be. You learn to see the gentle hula jiggle from the regulator and that’s when you time your canning processing. So easy and no worrying about where the needle is on that fickle dial gauge. Once again: 3-piece Presto regulator/model number is 50332. Give up using that standard 15 pound regulator that you must play around with the dial gauge to use properly.

      I agree unless your altitude calls for 15#. I use the jiggler with my gauge and I love it.

      I just bought a new Presto from Amazon, I will start to use it, first time canner. Don't know too much about these accessories, but I think, I know what you are talking about, and I'm so happy I found your comment here. I just realized that my pressure regulator is only one piece instead of 3 rings I've seen before in other videos. It seems, I have to buy a jiggler regulator you are talking about! I don't even know, which weight should I use, I am on elevation of 1004 feet. Can you please help me, and give me advice where can I buy the jiggler regulator as well? Thank you very much!     I think it’s important to note that the pounds per pressure varies depending on where you live. Not everyone will pressure can at 10 and 11 pounds. Depending on where you live it can be 5 pounds 10 pounds 15 pounds just make sure you find out what your elevation is so you can pressure can at the correct poundage

      Exactly! I can not find a video that uses the Presto pressure regulator for 15#'s pressure correctly. My elevation uses 15#. I also have 3 All American canners and there are videos everywhere for 15#'s pressure.

    Good video. Just refurbished a older Presto 21 qt. I plan on canning meat and fish, maybe some vegetables. The comments from your viewers are also a great help. I'm a newbie canner. I've made many meals using my 6qt stainless steel stovetop pressure cooker that came out better than the oven or crockpot in under an hour.

    Good morning Our little bit of Earth.Thank you for this very informative video. I want to can 20 pints in my canner, but I only have one rack. I thought the jars shouldn’t rest on the bottom of the canner while cooking. Or can I can with the only in between the jars. Also where I live my altitude says 10 psi. With this canner every video I’ve seen its at 11 psi. I want to can piano beans. I wanted to do the no soak method, but someone on FB said not too as its unsafe. I will now cook for two minutes in boiling water, soak for an hour, drain than refill pot boil for 30 minutes, fill jars leave 1” head space. How much do i fill the jars with the beans? As they wi continue to swell from the pressure. Thank you so much. Happy Thanksgiving 🦃🍽.

      For the racks, yes you are correct. You need something on the bottom of your pot and also if you are stacking you will need something between your jars. I have personally ordered these two racks on Amazon. I will link them below for you. The no-soak method is a rebel way of canning beans and it is how I can them. I find if they are soaked they get a bit soggy. As far as pressure, if you have a gauged canner you will can at 11psi. If you have a weighted canner you will can at 10psi. Remember the PSI is based on your altitude.

    How do you keep the PSI at a certain level ? Say I want to keep it at 10 PSI how do I do that ?

      Hello Brian. You really just have to adjust your temperature. You may feel like you are babysitting it, but you will eventually find that sweet spot and be able to keep it there.

      So making the pressure adjustment doesn't adjust my cooking time as long as I don't fall below 10lbs, right?

    When I put my gauge on it rocks. Yours looked tight. It said to only hand tight the nut

      Mine is hand tight. Do you have the rubber piece on it? Make sure you have that and tighten it up a little more. It should be able to turn but not wobble.

    Many have said you cant can on glass stove tops.. actually you can depends on the stove....Prestos aren't as heavy as others.
    I have a glass range and its fine...but I dont like mine anyway so replacing it......

      Yes, you can. I have always heard people say you couldn’t, but Presto now states that their canners are safe on glass stoves. They are lighter in weight. We have sense moved and have a glass top stove now. I’m not a huge fan of it but we live too far out for gas. Eventually I would like to get a tank put in but that is a ways away. So I’m canning away on my glass top stove. So far no issues.

    You are a god send! I have been freaking out over the gauge! I know it can’t go below 12 pounds for me but I have been fighting to try to keep it from going to 15 pounds. This is my first time and I have been completely babysitting the pressure canner the whole time.

      I just got my canner and the first thing I'm trying is left over beef stew. Instructions say start timing 75 minutes once rocker starts and at 10 pounds. Well, weight didn't start rocking until 15 pounds and if I reduce heat, it stops. How do you get 10 or 11 pounds of pressure with weight rocking? Totally frazzled watching this canner.!?#@*

      @@vikkigoodwin8322 different size weights will do different pressures. Over pressure is not a problem with the weights but under is.

    Do you add three quarts of water or three inches of water? I have the same pressure canner and typically use three quarts of water. Hope that's correct.

    I have the same pressure cooker- presto 23 quart. I only use 3 quarts of water when canning my green beans? I’m so use to water bath canning jams and stuff, where you have to COVER the jars in water.

    Thank you. I’m using my new Presto for the first time. It’s been REALLY difficult to keep the pressure even…it went up to 15# a couple times,then,went slightly below 11# for about a minute. I started the time over. Fortunately,I was only a few minutes into it. I found the best I can do is keep it at 12#. I’m hoping that is not a problem…..? PS.. I’m canning raw,bone in chicken,so,I REALLY want this to be ok….

    I just bought this model Presto 23-Q pressure canner, and it says in the manual that you can stack jars directly on top of each other without an extra rack. I'm about to can for the first time and seeing your video, I'm hesitant about doing so even though the manual says it's okay. Can you explain why you say this? I'm nervous about causing any problems. Thank you!

    Can you speak to the gasket and when you might have to replace it due to age, wear and tear ? Thanks

      It is recommended that you replace the gasket if it ever becomes cracked. The sealing ring it is recommended to be replaced every 2-3 years or if you can't maintain pressure. My Presto Canner is 10 years old and I have only needed to replace the gage, due to the plastic cover breaking. These are really built to last. If you ever by one used, I recommend replacing the seals and gaskets. Replacement parts are fairly inexpensive. Also if you buy one used, make sure you do a trial run with jars filled with water. Just to give you an idea on how the canner works. Also many extension offices will test your canner for you, and make sure the pressure gauge is working correctly. All you have to do is bring in your gauge and canner lid in and they can test it.

    Great video. I have an All-American Canner which I absolutely love but I need to get a second canner. The All-Americans are quite expensive so I’ve been thinking about a presto which I am not real familiar with. So watching your video makes me a little more comfortable about trying a presto

    Ma’m your pressure valve in the back is upside down. That round wheel acts as a Lock on the inside when there is pressure inside.

      Yes, that can be normal. It could be some siphoned liquids from what you canned or if your water. It should be fine. Congratulations on using your pressure canner!!!

    My hubby and I just purchased a new pressure canner. Three years ago I threw out an old, missing parts pressure canner that we used as a steam bath canner. While helping me can he went to lift the lid from the canner and it had accumulated pressure. He lifted the lid and the boiling water literally sprayed all over him...head, face, hands, neck, shoulders and back second and third degree burns. It was awful! I swore never to own one again. So...fast forward to today and we are venturing to can meat to have on our shelves. A brand new canner with carefully respected directions. Here we go.

      It needs to force all the air out which takes around 10 minutes so that it can become like a pressure chamber to can correctly.

      It just screws into the top and bolts. Make sure the rubber is in the hole nice and tight.

    First time using mine and I was only supposed to need 11 lbs but it quickly went to 15lbs (using electric stove and I have turned burner clear down to 4 from 9 and it's still at 15 lbs 18 min into the timer!!!! N and my regulator still is not rocking! What did I do wrong???

      Do you have a gauge? If it’s at 15 just continue to lower the burner, you may need to turn it on low.

    Is the bottom supposed to be dead flat? I have one and it's got a bit of a wobble to it, a nice. Did not have that before the first time I used it

      If the bottom is warped then it isn't safe to use for pressure canning. It shouldn't have a wobble. I'm sorry.

    I understand with the jars water and canner it weighs roughly 50 pounds according to presto. You also cannot use it on a smooth top electric range as it’ll crack it.

      I have a smooth top now since we moved- I can on it. I wouldn’t suggest the all American on a smooth top but I think the Presto is fine- just my opinion.

    thank you , you made it look simple //// canning question,, i have 3 chicken legs , i fry one and put it on the plate. the second one i fry up then put it in a mason jar and can it, the third leg i just can it raw then when i open it i fry it some to brown it and i put all three on the plate, will they all taste the same with the same texture and taste like the first fried leg??? thank you i don't to make stew or anything eles, same with pork chops thank you...

      I have never canned fried chicken. I have fried canned chicken, and that was good. I can't speak to how fried chicken canned taste. Would you dry can it or add some liquid? I would say to test try a few jars and see which one you like.

      @@cherylfavreau3517, that usually is due to your water but it isn't going to hurt anything. I have well water and it happens to mine as well. In the video, you can see my canner is darker on the inside. It is normal. I add some cream of tater every so often and that helps with water spots and my canner and lids turning black.

    I attempted to pressure can today for the first time. My gauge never moved. I think I'm missing a plastic ring on the gauge. Could you comment and let me know please. Thank you

      Is it a new canner or used? You say plastic ring, do you mean the white rubber ring that goes around the pressure gauge? I will help you get this solved, so you can start canning! Look forward to hearing back from you.

      @@ourlittlebitofearth7029 its a used canner. Yes, exactly what I thought. I zoomed in on a picture and thought I saw a white plastic ring. I'm going to see if I can order it. Thank you so much for responding so quickly

      @@Freedom-em3zb try Amazon. If you can't find that rubber seal, you can order a new gauge and it will come with it. That will cost around $13. Happy Canning!

      @@ourlittlebitofearth7029 thank you so much . I will, there is some moisture in the gauge now just from being on the canner without the plastic ring. I turned it off when I saw water bubbling underneath it.

    Hey there! Great video! Have you ever had to replace your rubber gasket? Do you can every year? How old is yours? (Questions! Sorry! ^^; )

      I have not needed to replace my rubber gasket. Most likely because it never sits up because I can all year round. My presto canner is around 11-12 years old.

    Good Job, right to the point, not too much babbling or getting off topic, could hear them speaking loudly and can understand what they're trying to say. The lady did ok too! LOL. Nice job, I'm getting one soon, I do a lot of venison in jars, it 's sooooo good but my small pressure canner/cooker only holds 3 quarts at a time and that's why im getting this one fom amazon.
