Okay, new player here. Quite a few of these moves seem counter-intuitive to me. Riddle me this: why, at 2:57, would Greece not use that piece to close off Japan from joining it's large city?
+Ebony Bowie There are several reasons. Japan could join the city on the other side. The city is locked. The city will never complete. And there are more reasons to place the tile on the site chosen by Greece.

Why did blue place a farmer on the chapel near the end? Surely a monk would have scored him/her 4 points? I know this wouldn't have won them the game just wanted to ask the tactics of the play.

But unfortunately, the other team picks up that tile. Given Greece's desperate situation, its a fair attempt at trying to win back the game that they know they're probably mostly losing.

If you put a curve in your road it will be easier for Greece to get in that road.
