Recipe #1: Freezer Meal Instant Pot Crack Chicken Chili
1 ½ pounds boneless, skinless chicken breasts or thighs
2 tsp Better Than Bouillon Chicken Base
1 (15.5 oz) can seasoned chili beans
    1 cup frozen corn
1 (14.5 oz) can petite diced tomatoes
1 (4 oz) can diced green chiles
    ½ cup bacon crumbles
1 packet or 3 Tbsp dry ranch dressing mix
    1 tsp cumin
    1 tsp chili powder
    1 tsp onion powder
1 (8 oz) package cream cheese
    1 cup grated cheddar cheese
    Cornstarch
    Assembly Instructions:
Label a zipper freezer bag with the title Crack Chicken Chili. Add the chicken, Better than Bouillon, chili beans (undrained), corn, diced tomatoes (undrained), green chiles, bacon crumbles, ranch dressing mix, cumin, chili powder, onion powder into the bag. Seal the bag securely. Freeze the bag in a shape that will fit into your Instant Pot.
    Instructions for day of cooking/serving:
Add 1 ½ cups water to the bottom of your Instant Pot. Dump in contents of bag. Dump one brick of cream cheese on top. Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the SOUP button (if you don’t have a soup button use the manual/pressure cook button) to 10 minutes (if bag is thawed) or 15 minutes (if bag is frozen). When the time is up let the pot sit for 5-10 more minutes and then move the valve to venting. Remove the lid. Use tongs to remove the chicken and place it on a cutting board. Shred up the chicken well and add it back into the pot. Stir the chili so that the cream cheese incorporates. Stir in 1 cup of grated cheddar cheese. To thicken use a cornstarch slurry. Take 2-3 Tbsp of cornstarch and 2-3 Tbsp of cold water and stir together in a small bowl until smooth. Then turn the Instant Pot to the saute setting. Stir the slurry into the Instant Pot and the chili will thicken quickly. Once chili is thick turn off the Instant Pot. Ladle chili into bowls and serve.
Recipe #2: Freezer Meal Instant Pot Ravioli Lasagna
    1 (12 oz) package pre-cooked smoked sausage
1 (24 oz) package frozen ravioli or tortellini
1 (24 oz) jar or can or your favorite spaghetti sauce
1 cup ricotta or cottage cheese
    1 cup grated mozzarella cheese
    1 cup grated parmesan cheese
    Assembly Instructions:
Label a zipper freezer bag with the title Ravioli Lasagna. Slice the sausage into quarter inch rounds. Add them into the bag. Add in the ravioli and the spaghetti sauce. Seal the bag securely. Freeze the bag in a shape that will fit into your Instant Pot.
    For day of cooking/serving:
Add 1 ½ cups water into your Instant Pot. Dump in the contents of the bag. Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When the time is up let the pot sit there for 5 minutes and then move the valve to venting. Remove the lid. Stir in the three cheeses (1 cup ricotta, 1 cup mozzarella and ½ cup parmesan). Scoop onto serving plates and enjoy.
Recipe #3: Freezer Meal Instant Pot Honey Lime Salsa Verde Chicken
2 pounds boneless, skinless chicken breasts
    1 Tbsp olive oil
    1 ½ tsp chili powder
    1 ½ tsp kosher salt
    1 tsp onion powder
    1 tsp garlic powder
    ½ tsp smoked paprika
    1 tsp cumin
    ½ tsp black pepper
    1 cup mild salsa verde
    ¼ cup honey
½ cup fresh lime juice (about 4 limes)
    Assembly Instructions:
Label a zipper freezer bag with the title Instant Pot Honey Lime Salsa Verde Chicken. Add chicken, olive oil, chili powder, kosher salt, onion powder, garlic powder, smoked paprika, cumin, pepper, salsa verde and honey into the bag. Seal the bag securely. Freeze the bag in a shape that will fit into your Instant Pot.
    For day of servings/cooking:
Add ½ cup fresh lime juice into your Instant Pot. Dump in the contents of the bag. Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 12 minutes for thawed or 15 minutes for frozen. When time is up let the pot sit for 10 minutes then move the valve to venting. Remove the lid. Use tongs to place the chicken on a cutting board. Then shred the chicken. Then turn the Instant Pot to the saute setting and let the juices boil and reduce down for 10 minutes. You don’t need to stir. Turn off the Instant Pot and then stir the chicken back into the pot and coat the chicken with the juices. Serve and enjoy!

It's absolutely the case in our family that I am the one doing the Instant Pot and slow cooker meals. I also man the bread machine and the air fryer, definitely into the "gadgets" when it comes to cooking. I also like fermenting foods like sauerkraut and pickles. My wife tends to make way more casserole type dishes or lasagna in the oven or things on the stove top and is always the one making cookies in the evening or pancakes and waffles for breakfast. Odd, but I am the only one who ever makes French toast...

I am making the crack chicken chili tonight but after I printed out the recipe I noticed it is quite high in fat and sodium. I will be making a few adjustments such as using low sodium chicken broth, low fat cream cheese, low fat cheddar cheese and no salt beans rinsed. If u could offer a low fat low sodium version of ur recipes that would be great. Thanks. Update - So with my lower fat and lower sodium changes this still turned out great with lots of flavour. My husband had a second helping and said I should make it for our Daytona 500 party. That is definitely a good review!

Made the Instant pot ravioli lasagna the other night it did not turn out. I was able to get the ziplock chunk into the instant pot but it was too tall to get the lid closed. Had to beat it with a mallet to get it to break. When the cook time, pressure release was done I was left with a baseball size chunk of ice in the middle and the sausage was burnt to the bottom of the pot. I used kielbasa, imagine how that smelled burnt! We were barely lucky enough to clean it out after almost 48 hours of soaking the insert pot, which is now a scratched up hot mess!
In the end I'm done with freezing first. SO be warned after this dish my shinny pot is a scratchy mess now. Hurts to look inside my brand new Instant Pot!

The Honey Lime Chicken was a winner! I made another recipe from the video you did with Six Sister's on their channel and we didn't like it at all. So after that experience, it took me a couple weeks to finally pull this one out of the freezer and give it a chance, but it was super good. Here's a question: how do you get the freezer meal out of the bag if you don't thaw it? I had to resort to defrosting it for just a bit and I think it caused the chicken to come out a bit on the drier side.

    A couple of questions:
    1) What does this mean? ½ cup fresh lime juice (about 4 limes). It's the about 4 times that I don't understand. Is that use approximately 4 limes and squeeze the juice out. I would imagine that the pulp would be okay, or should it be strained out?
    2) I prefer to cook everything in the IP and not have to do anything else, like cook rice separately, or vegetables. If I wanted to add a cup of rice, how much extra liquid (and type) should be added?
    3) If I wanted to add vegetables to this recipe, what would you suggest?

    • @karenbellessapeterse
      @karenbellessapeterse  4 роки тому

I'm assuming you're asking about the honey lime chicken? It's a half cup of fresh lime juice. That means that you will squeeze enough limes to get a 1/2 cup of lime juice out. That usually takes about 4 limes. Pulp is okay. For every cup of rice I would add in 1.25 cups of water. As for the vegetables I would add in a bag of frozen vegetables after the food has pressure cooked. I like the idea of red peppers.

Was there a step left out that more experienced users might had understood was supposed to be done?

I just made the last recipe honey lime chicken and it came out partially frozen! 🤦🏻‍♀️ I followed it exactly and cooked it for 15 minutes in the instant pot (like it said if it was still frozen) let it sit for 10 but it’s partly frozen I don’t know what to do!? 😭

If we wanted to also try these in a cp, would the ingredients be the same? I am sure cook time would vary as well.

Jenny McDonald hi! Yes you can definitely make these in the Crockpot. I wrote the crockpot instructions at the bottom of each recipe card on this page -> www.365daysofcrockpot.com/3-dump-and-go-instant-pot-freezer-meals/

Do you leave the bag open when it’s in the instapot and do you add water in the pot?

    • @karenbellessapeterse
      @karenbellessapeterse  4 роки тому

You add the water or broth to the pot then add in the frozen ingredients from the bag. Here are step by step instructions: www.365daysofcrockpot.com/3-dump-and-go-instant-pot-freezer-meals/

    Question (observation for others)
I made the Ravioli Lasagna but thought Alfredo sauce sounded better with the sausage than red sauce would.
    It burned!!!
Can dairy not be used in the IP? Or is it possible I did something else wrong?
(I did add water with the jar of sauce)

I made the crack chicken chili last night. It was delicious. My issue was that after the 15 minutes, the frozen chicken did not separate in the instant pot. So I had to break the chicken apart and cook in the instant pot for another 15 minutes. Does anyone have a suggestion on how I can prevent the chicken from sticking in the instant pot. I am not sure if anyone has the same problem.

You provided some extra information, like add x amount of water when you put it in the pot, that you didn't write on the bag. Since I won't remember any of this when I pull it out of the bag, I will write it on the bag when making the recipe.

Do either of you cook without gluten, soy, and GMO's? I'm curious if that Dry Ranch Dressing Mix is GF. I'll share this with my adult son who LOVES his mom's White Chicken Chili and he bought himself an Instant Pot (so he could make rice). Single guy. ;) I've been intrigued with using Instant Pot after seeing a vlog of a couple who traveled and had it for their cooking. Really simplified their "kitchen" yet they ate wholesome meals, not fast "foods" while on the road! WOW!

I like watching both of your channels. That said did you notice how many of your dishes were chilli based? I had hoped you would have had more different types of dishes. Not everyone can eat spicy foods. I had been thinking about doing some dump n go for pasta in small portions. I am cooking for myself and don't want 4 meals of the same time. I am a caregiver for my parents. There are times I just want to cook something they won't eat. I cook in my instant pot and freeze portions to pull out later as needed later.

Hello, why is the cooking time only 15 minutes from frozen when Kristin says 20 minutes for fresh and 25 minutes for frozen?? I am worried 15 minutes would not be enough time. I can’t stand recipes that don’t work out.

    • @karenbellessapeterse

Hi Karen, I tested my recipes and they all worked great. I guess it's a personal preference. If your chicken breasts are 12 ounces or less than 15 minutes should be plenty of time.
