Grew up in Bristol, R.I. The Oliver St. bakery had the best spinach pies, chourico pies, pizza and fresh bread. The smell in that bakery was intoxicating!
Moved to RI from the West coast and spent 3 years there. The people were SO nice! I moved back West and miss RI, and the food. Thank you for sharing this. Craving my wimpy skimpy and will try to recreate it.
I am a native Rhode Islander living on west coast and missing authentic RI spinach pies. I have made them using my pizza dough but could not get the bread like quality to the pie. Thanks for the handy hint to let the filled pie dough to rise before baking, plus the egg wash.
Thanks. I love them with black olives, mushrooms and crushed red pepper. People need to learn about these. We never opened them up and added anything to them. I am from RI.

I have to say… I am living here in Italy and when I tried to Google spinach pies, recipes for Greek spanacopita came up.. and when I finally saw your video and the images of spinach pies I was looking for, I said, ah he must be from the northeast or New York… then I head you say you grew up in Rhode Island!! I’m Rhode Island born and raised.. so it’s no wonder why this is what exactly what I was trying to find haha ⚓️
On top of the olive oil, salt and garlic pepper, I add some red pepper flakes. Gives it some kick. And these ROCK with pepperoni and black olives added! Great vid.
