Both are great, but induction is such a game changer for pastry work! Caramels and sugar syrups can be cooked over a high heat without the flame going up the sides of the pot and sugar sticking on the edges. Some induction plates can be set to a specific temperature as well, super handy! Will always love gas though ❤

I'm team induction. In my parents House we have an electric stovetop. It's nice and all but in my second flat after my apprenticeship I bought myself an induction on. And damn is that a nice chance after having one cheap mobile one. It's fast, it's efficient and it can get my pans and pots really hot! When I'm visitin my parents I forget sometimes how slow electric ones can be when I need to boil water. Gas stovetops on the other hand are a mystery for me. My kind of father-in-law have one but I don't like to cook on it.

Induction fixes all of those issues and is 90% as good as gas in terms of quick temperature control
I will tell you something. If you want to move the pan around, don't do it on the stove top. Raise it a bit, then move. We recently had a glass top oven, and it got scratched since we didn't notice how this movement scraches the top.
but how long is that thing gonna last? my family has had the same stove for 19 years and with minimal maintenance it works so well. i dont see these new stoves doing the aame.

How do you plan on blistering the skin off a pepper? What about when the rice or pasta boils over just a little and the entire stove just shuts off? Sorry, but I like my gas stove- I insisted on a great hood and I'm not concerned about air quality.
The blistering of a pepper is something only a small amount of people do. And the boiling over makes no sense, a pan boiling over is more dangerous on a gas stove. On induction you just turn down the heat and go on with your life instead of risking free gas in your house
As someone who last week melted their phone case by accidentally turning on the wrong burner on their electric stove top…I don’t think I trust myself with an induction stove yet😅
IV tried both and prefer gas by a lot. It’s easier to control temp while cooking especially when you want to lower or stop heat since induction stays hot it’s harder to decrease heat quickly
Induction is by far the most efficient and consistent, but there's one thing I miss the gas for... wok stir-fry. It doesn't need exact temperature control, it needs a LOT of instant heat so that the liquids of the veggies steam off rather than sweating into the bottom making a soup while you're resting it on the stove top to get more heat into the wok.
I honestly lean towards hating it. There are a few times where it makes life easier (I don’t have to get a flame just right, a level 4 is perfect for my scrambled eggs) but it’s so irritating. If you accidentally spill a bit of water everything shuts off and you have to wipe and even then it’s not happy sometimes. Also, cooking rice perfectly can be really difficult on it too.

If you're using flat bottomed pots & pans, induction would work best.
I use a wok, so I need the flame to climb up.
As of today, I'm team GAS because I have such a great relationship with fire. I was fire torch Welder, so fire speaks to me. Even when I'm cooking. 😅
