Question: On your double recipe, how many total cups of the warm water did you add into the big bowl that the flour was added into? I understand about the flour not always being the same amount, been making the single recipe for years now 😊~ but I got a little confused about how much total cups of water was added in this recipe. Oh, thank you so much! I'll put the doubled recipe in the comments but here it is again: 3 c warm water, divided 3 Tbsp active dry yeast 4 Tbsp sugar, divided 4 - 5 cups Kamut flour as needed 2 tsp only of Coarse French Salt Happy Baking!
Made this AM and I am so disappointed! I'm an experienced bread baker (since I was a kid!) and have been successfully making bread with freshly milled flour. I just got some Kamut berries so mine was freshly milled. My yeast mixture was awesome. I needed to use only a HALF cup of the 1 cup left. I did add more flour and I had a lovely, smooth dough. I don't have any baguette trays so they did spread on the tray. Oven was at 400 because the small oven I used overheats. I used a pan of water and spray but they didn't really rise or get crisp. Any advice? Love your crazy, energy! People can only smile and want to rush to their kitchens after watching you. Thanks! Not a Julie!
Haha. Love this! Thank you, Not Julie. We would go back to looking at your yeast and water temp - making sure it was really bubbly. And then I would also guess that the low temperature was too slow of a rise and bake at 400. This bread excels at 450 - 500.
@@thefoodnanny thanks! I'm thinking it was the oven temp as well and maybe the rise on the counter was too long? Will give it another try! I HAVE TO after watching you. My SAF yeast was nice and bubbly up to the top of the 1 cup measuring cup.
Yup, she is completely ignorant to French Baguette ingredients and how traditional French Baguettes are made. What she made was bread rolled to the “almost” shape of a baguette.
