- We have had many questions regarding dehydrated foods and this video answers most of them. Dehydrating food is a very effective and economical way to preserve nutrients in food to a greater degree than canning. The shelf life is a year or more depending on several variables.

Completely agree. After a few episodes I felt brave enough to buy a dehydrator and even try my hand at the powdering. I’m actually excited about this! So much to change my food preps.

I used to dehydrate a lot of foods, but since I got my freeze dryer, I haven't dehydrated since. With the freeze dryer, I know my foods will last a lot longer than a year, without losing nutrients. Positive note: You are an excellent teacher, and I enjoy your channel so much. I thought I was subscribed a long time ago, but lo and behold, I saw today I wasn't! But, I am now. I could listen to you lecture all day long. I walk away with so much knowledge! I love your voice, your examples, the proof of what you have done! Keep up the great work. You are touching many lives.

I have a degree in Animal Science, so I, too, appreciate the educational, scientific background that you include with your videos. I don't have a freeze dryer, that's way down the list! But a few years ago, I did upgrade from the round food dehydrator to an Excalibur.
Change in mindset over putting food up: I used to can and freeze in the summer only, when vegetables were ready in the garden. Now, I try to can, dehydrate, and freeze all year long, which includes meats.

It is probably the bags. I had that same issue of the bags not staying sealed over time. Switched bags and now all works fine.
I love the fact that I can trust what you are telling me. We live in a blue state that has mandated vaccinations. My husband and I are learning food preservation on the fly for when the governor says unvaccinated people can't buy food. I keep returning to your channel because the directions are easy to follow, you're safety conscious, and I just plain think your cool. Thank you for you help.

I like the LEM brand bags. They are heavy duty bags used in restaurants and can be found at some farm stores in the processing areas of the store, as well as restaurant supply stores. (and online)

I was given 100 of those bags & they are great! Mine are large enough to put a whole farm raised chicken in.
Ya, a lot of times it's not the seal that fails it's the bag itself. The thin plastic either turns brittle and develops micro failures or the food in the bag is sharp and causes micro-punctures and overtime there are air leaks. I just purchased a box of LEM, my ONLY complaint is their boxes. I have twice purchased the wrong thing due to similar packaging. I bought the giant gallon bags instead of rolls. LOL. They are HUGE.
I also do a double seal on bags that go in the freezer.

This video came while I was eating lunch ( I usually watch you early in the mornings) This reminded me once again of my dear Aunt that passed on a few years back; Long story , but she back in the late 1980s got into food dehydrating. Started with drying some fruit out in the yard on tales, ( but she wasn't fond of the flies) . Next step she decided to try dehydrating a bushel of sliced apples in her clothes dryer! ( it worked she was proud of that feat but to her dismay she had to purchase a new clothes dryer after she proceeded to dry many many loads of apple slices which she stored in several lard cans in one of her many pantries)! . Fast forward to 2013 (after her passing) I discovered several lard cans filled with dried apple slices that she had stored in those lard cans from the 1980s! I opened them , they still looked and smelled fine but I did not try to taste them, but I imagine they would have been fine! I am glad to report though she had purchased a new dehydrator immediately after her clothes dryer mishap, Without a doubt I had ate fried apple pies made from those "clothes dryer /lard can apples all though the next three decades as she loved to cook those fried apple pies! Fried apple pies....you just reminded me of the first time I ate at McDonald's in 1981 (it was super rare since we were so poor, probably was a b-day). Now I can't eat McD's or I feel so sick!
I'm going to attempt to make an apple pie in my air fryer today! I am currently using up a can of apples from 2001 - they make great powder! 🥧
My grandma made the BEST fried apple pies from her dried apples!!
@@T_Barb my Grandmother made good fried pies too, but for some reason her oldest daughter (My Aunt B that I was referring to in my little story) made them much better . I think those homemade fried pies are a lost art here in the South.I wish I had got her to teach me how she made them!

Amazon has a payment plan if you need it. I would deter from buying a dehydrator from Nesco. My unit was only just shy of two weeks when I decided to return it. Well, they do not allow returns. I had to fight like crazy as every tray came very warped. I think their warehouse has excessive heat. Anyway, they still hem-hawed over it so just gave it away. I did purchase a Magic Mill and I use it almost weekly! I absolutely love it!!

Thank you so much for your advice on how to process food for storage! I started canning again. Haven't done this since I was a teenager with my mom. I bought a dehydrator recently and I am determined to make powders and try out the soup recipes.

Pam I truly appreciate all that you so selflessly share with the community. I too have had those mice issues in my detached garage. I was planning on storing an auto for long term and was warned how much damage they'd do from nesting and destroying the wires ect. The suggestion was to put moth balls on the ground all around the perimeter of the auto. I also added bags inside to add additional security. After eight years of storage and without it ever being started during that time we needed to move it so we checked the lines, the exhaust, and charged the battery at which time it started right up and was driven without issue to be checked out further. No mice damage. Believe me we found droppings in other areas of the garage. I did add moth balls twice a year to keep them strong. Hope you find this helpful. I do dislike the smell of moth balls but I loved my car.
Vicki: Yes, we appreciate the suggestions. Fortunately, we do not store the cares in the garage, because we have to drive them every day. The droppings have diminished because we have placed lots of poison mouse cubes out there. Jim
I am 77, And live in Amarillo, Texas and don't understand storing tepache ? I here you (I think ) story in your Garage But summer is 100+ and winder is 32- and lower I have used a 3rd bedroom and that temp. isn't what you say good for long tear ?? can I or we see yours! thank you. were do I find your Book.😵💫

Hi there. Thank you so much for the informed videos. I live in Newfoundland Canada, we are an island and the shelves are pretty bare and the prices of groceries is higher due to the trucks have to board ferries to deliver our items. There is of course the extra amount of money added to fruits, veggies and meats because of this. Your channel has helped so much with preserving food. I borrowed a friends dehydrator and am now going to purchase my own with a fan. Just a small one as I live alone and would like the convenience. Thank you so much. I have watched other videos and do find the information you give for storage and dehydration so much better. You know how to preserve and teach in an amazing way.

Thanks so much for great shortcuts. I just loaded up my dehydrator with frozen veggies: 1 bag each of : asparagus, green peas chopped spinach, riced cauliflower, and mixed berries. So easy! And no blanching!

Much needed...thx. mine is a magic mill, and our oven has a dehydrator setting and cooked meat be dehydrated? Rendered beef tallow preserves very low or no fat meats. I have also found that mylar & o2 absorbers take less room. But then I store the mylar in food safe air tight containers. I 'm new to this, just this year, but have learned so much from reputable peppers such as you...thx so much!
Thank you Pam! hope you are having a good day. I've been doing a lot of dehydrating this summer because my jars were running low and I can get more tomatoes in one jar when they are dehydrated. Although, I admit I'd rather can them. I like the natural juice from the tomatoes. Maybe I'll try powdered tomatoes and basil to incorporate into artisan bread this winter.

What about dried cranberries and raisins? I sealed these in quart jars with oxygen absorbers. Now I’m concerned and confused because some peppers are recommending this while other homesteaders are saying it could cause botulism. My dried cranberries are from azure standard and my raisins are sun maid raisins from Costco. I thought I’d ask you Rose Red because you have an educated background. Thank you, Alisha
Great information!! I'm just starting to use my food dehydrator. My goal is to create a soup pantry. I tried it with freeze dried, but it was a hassle to keep the freeze dried foods properly stored. I'll probably can some freeze dried meats for one time use. When I say "can" I mean vacuum seal after freeze drying. We are fortunate that we all love soup! I made soup last week using exclusively dehydrated vegetables, and none of my kids were the wiser. 😉 Take good care and be well! ❤️
I honestly don't know how this channel hasn't surpassed several hundred thousand subscribers yet! I am confident that it will with the wonderful information you give. Because of you, in the last month I have dug out the dehydrator and dried anything that doesn't move...purchased a vacuum sealer and the can attachments (works like a charm!)...and a labeller so I can tell what those wrinkly bits/ powders are on my shelf! Ha ha. Next up...those dried soup recipes, so my backpacking/camping family members can travel light!

Thanks for the lessons. You are the one that inspired me to get a dehydrator. I love it !!! I live alone and my produce was always spoiling before I could eat it. The only produce that goes bad now is a cucumber. Having dried veggies makes soups, stews, and dumplings so much easier and faster.
Hiya Pam! I had a bit of a chuckle today when you mentioned your lovely viewer's DYI dehydration idea. We have a couple of old vehicles on our property (a bone of contention that I won't get into right now,) and I was thinking to myself, I could try that because, where we live in NSW, the temperature inside those vehicles would probably be perfect! The only problem is that in one of those vehicles we have a resident Diamond Python who likes to bake himself on the back shelf! (True story!) I'm not sure whether he would be too happy having his slumber disrupted for any reason, let alone in aid of me shrinking a few slices of veg! Hahaha! Cheers from Oz! 🦘
Love that story. Jim and I did selective breeding of ball pythons for a decade and sold they all over the country. Sometimes I miss that, but we were more than ready to move on! I would probably avoid that particular spot for dehydrating! LOL
You can make a simple solar dehydrator. There videos on UA-cam. Also, you can buy hanging air dehydrators on Amazon that are non electric. Apples can be thinly sliced and hung up on a dowel to dry. Look up " leather britches" for how to string up green beans to air dry
. Also some people dry their peppers by stringing them up.

I stopped using my prep pantry about a month ago and I'm adding to it. I'm using what is in my kitchen pantry and kitchen freezer for my every day cooking until the shortages are over. If I run out of something, I go to the store and buy it. What I've been noticing in the stores is forcing me to be more cautious. I bought a case of canned green beans, it used to have 12 cans now it has 8 for the same price. I enjoy your videos so much. Thanks!!

You are given me an idea: when I was a nurse in residence for patients at the end of their life with the cancer, we were making a special soup cuz they had problem to chew . But with your veggies powders, they won’t know that there is veggies. Often, they hate some veggies but it’s good for them! We will begin to do veggies powders! Thanks a lot!

My friend had Stage 4 lung cancer (never smoked a day in her life). She'd mix up her green drink in a blender after chemo session. Loaded with spinach, berries, etc.
Her healing was so MIRACULOUS & quick that the Mayo Clinic docs want to study her case.

I think we can all agree that organic green veggies play a key role in overall health. I know she focused on getting a lot of nutrition into her body after every treatment. Glass after glass of green juice (primarily kale, spinach, and blueberries). She would even juice the outer part of organic watermelon rinds.
I know her drinks were very low in natural sugar as she often spoke about reducing inflammation. She also ate a lot of fish.

After watching your video on dehydrating frozen vegetables I got some and tried it. I put them in canning jars. I used the food saver to vacuum seal the jars. I then decided since canning jars and lids are so difficult to find right now, I decided to empty the jars and use the vacuum sealer to seal everything. I use the veggies to make my homemade pet food. I was also not sure that ALL the moisture was out though now after watching this video I realized I had no condensation in the sealed jars! That was a very helpful bit of info for me! The question I have about the jar of peas is , could you make a powder out of them instead of discarding them? Thank you for all the valuable information you and Jim provide for us!😊
The powder is only as good as the original food, so before doing that, I would rehydrate some and taste them. If they tasted OK, then I could easily do that. Thanks!
I just started. Do you know what to do if the fruit isn't fully dehydrated and it's time for bed. LOL. Serious question though. It's taking a long time for apples and bananas. Can I turn off the unit and let it sit over night in the machine or do I store them in a jar or bag and dehydrate more tomorrow? ty

I use An Air Fryer! I’m not a meat eater! I made my own red beans and rice and Soup Mixtures! I use Airtight Containers! I do Garlic 🧄 and make my own garlic powder! Great Informational Video! Thank-you! ❤❤❤❤❤❤❤❤❤
Perfect timing. Im doing walla walla onion right now. I havent used my dehydrator in about 10 years so this info is a great refresher. I pulled it out if storage and it works great. I have a round, 9 shelf garden master brand.
We LOVE Walla Walla onions! I have dehydrated lots and lots of them. Some are now 3 years old and still perfectly wonderful. Thanks for sharing.

@@cynthiafisher9907 on another channel someone dried a bag of frozen onions (from the grocery store), to avoid that smell. They were tiny after drying! They also stuck to the plastic drying tray. Maybe freeze them then put on paper liners before drying.

I love your channel! I stumbled across it about a week ago and now both my mother and I watch it. We are both on the novice end of canning but want to do more. I am interested to learn more soup recipe to can. I saw one in your intro video that looks like chicken soup with a lemon slice in it. I have 2 Ball books and 1 Amish Canning book but have not found a recipe like that uses a lemon. Thank you, and your husband, for taking time to share with the world! I’m finally got for my self Food saver sealer for jars and I start my Journey in this road.I have 3 dehydrates round olds style but works wandifull.
Just made tomato powder from my cherry tomatoes,not bad. I also start buying rice and thinks start put in hard and start seal them in jar.Tanks to your Chanel I learn I can do that. So ty for share you knowledge with us.🙏❤️

This was a great video. I have only been dehydrating a short time. And not a lot. So this answered so many questions. I have some peaches coming later this week and now i can dry them and know that i dont have to dry them to the point of breaking my teeth when i eat them. Thanks so much Pam
This video came at the perfect time. I has peaches that needed my attention. I did can them, however, I considered dehydrating. Your peaches looked so good in your jar. I dehydrated blueberries on Tuesday. After 17 hours, there was a fair amount that were sorta like raisins. Unsure of myself, I put them in the oven for 1 1/2 hours. They came out very dry. I wonder if I should have left them in the raisen state and used an oxygen observer?

Sometimes it takes a few tries to get things just right. If they rehydrate OK, or if you can eat them as they are, then you have a success.
Would you explain why you can leave the rings off when canning but want to put them on when dehydrating? Or link me to a video that explains? Thank you 😊
For vacuum sealing I want that extra downward pressure to remain on the lids, but you can leave them off if you prefer.
Am really enjoying your tutorials. Love your can do attitude and the way you explain things makes it so easy to follow your instructions. You truly have mastered the art of store what you eat and eat what you store. It has taken me years and lots of wasted food to get that concept into my brain. Wish I would have found you earlier. My pocketbook would be much heavier.

I really like the way that you try to remember everybody, including those who read a bit of a disadvantage financially right now. I came across something online that I thought was ingenius: For those who want to vacuum seal but do not have a vacuum sealing unit, it’s possible to just pick up the attachment to go on the bottle, and to use the brake bleeding gadget from the garage to bleed it. There may also be a way to adapt the vacuum sealing gadget that people use for sealing partially full wine bottles, to work with the vacuum ceiling cap for Mason jars.

… I’m grateful to have found your channel … please explain your issues with the Mylar bags … I just bought a couple of rolls that is specifically for using in a vacuum seal machine … thank you ! .. BTW … I was also considering double bagging using the regular bags first, then the mylar to keep out light … I also have the packets to keep out moisture and remove oxygen to insert as an additional safeguard …

Very good info. I have never watched my jars after dehydrating. BUT, I do dehydrate to the nth degree. I have beets going right now and they were much thicker slices because I was going to f.d. before it died AGAIN! They are still slightly bendy - I will not stop until they crack when I break them. I have not had any problems with dehydrated (EXCEPT before I built the closet with closing doors to keep the jars out of the light) except discoloration (and I throw those out, but they were 6 years old).
I understand about the mylar bags. I am presently storing mine inside dog food containers or 5 gallon buckets to prevent mice from smelling. My understanding is that the stronger the mylar bag, the less problem. If they can't smell the food, they will leave it alone.

Hello. Thank you for your information and straightforward approach. I am new to dehydrating and have a question. If I place an oxygen absorber pouch in the jar of dehydrated food, do I still need to suck the air out of the jar with a food sealer type contraption?

we have always said " If in doubt throw it out " that has always worked for canning and I use it for every thing else in the food pantry botulism is not a good thing. Thank you for doing your videos i do enjoy them

Your videos are superb in their detail and clarity of demonstration! I have learned so many new and exciting things about food storage which I am using. I have dehydrated and powdered canned beets, and am ready to vacuum seal them, but I'm concerned about fine powders being sucked up and damaging the Food Saver. Could you show how you use coffee filters for that process?
I just take a coffee filter, cut it to size to fit inside the jar over the powder. It stays in the jar after the process. Someone else suggested using a cupcake paper, which is just about the right size.

I recently discovered yoir channel and I'm loving it. I grew up in a large family so the food we canned and dehydrated didnt last long. Now with just my husband and I, I'm learning to store for long storage.
Sort of my story as well. Growing up in a big family I never got enough bananas! So now I have plenty and I dehydrate them as well! Thanks for your comments.
