I live in a single bedroom apartment so storage space is limited. Dehydrated canned vegetables is a great space saver for me allowing more storage with far less weight.
You can get a flat storage tote and use it for food storage and put it under the bed. You can also use closets and anywhere you are not utilizing the space. Hope this gives you more ideas.

You are one of the few people I trust on UA-cam as to guidance on canning and preserving. There seems to be so few channels that actually adhere to the safety guidelines when canning. I was so tempted to can up pint jars of kidney beans without soaking or par cooking for 30 minutes. The rebel method looked so much easier and the outcome was so your beans wouldnt be over cooked and mushy. But then you explained about the toxins and of course there wasnt a tested recipe for that way of doing it. So many of the other channels will basically say if it was safe for granny and nobody got sick or died then its safe for me. People don't realize our soil we grow our food in isnt the same as it was decades ago because of things in our atmosphere and environment. Also seed companies are doing crazy things with seeds , and dont forget the chemicals used on commercially grown food that are now showing up at our farmers markets. All these factors would no doubt change how you might process food at home. Thank you for explaining things so thoroughly.

I dehydrate canned veg and fruit regularly, especially when they're on sale. One of my favs is Ro-Tel which I dehydrated on edged silicone trays, 1 can per tray. Then I measure and note the dried volume so when I make meals in jars or rehydrate, I know what quantity to use. I'm definitely going to try pickled beets!

I dehydrated frozen mango chunks and my grandkids loved them. No sugar and they were organic from Costco. Great video.

So crazy that you’re posting this. For the last few weeks, I’ve been dehydrating dry soup mixes for several reasons. First, storage space. My pantries are getting full. I’ve been using jars & vacuum sealing my dehydrated veggies that we toss into soups & those things, vacuum sealed bags take up less space. 2nd, vacuum sealed meal mixes are light, easy to pack & take less space in our bug out packs. I’ve been canning frozen or fresh blanched veggies. I tried my canned corn…was a mess. Frozen/blanched fresh had a much better texture. We’re going through our store potatoes, chopping/slicing them steam blanching them(per my Excalibur instructions) then adding the dried chunks to my veggie soup mixes. To those I’m adding my chicken soup base, onions, minced garlic, mixed veggies, potatoes & instant rice then sealing them.
Is your soup base dehydrated and if it is what did you use? How did you do it?
once dried you can put them in a food mill, and turn them to powder, and they last a long time, plus you can use them for broth seasoning and such
The great thing is that you can buy veg in food service cans and save some money. No wastage.
I’ve done that with canned chickpeas and seasoned them before dehydrating. They were yummy!
What seasonings did you use? I'd love to try it.

Did you you the aquafaba for anything? I wonder it it can be dried.
I sprinkled Everything Bagel seasoning on tomatoes prior to dehydrating tomatoes. They were excellent.

My only suggestion would be a sip of champagne from a beautiful goblet (in between taste tests) to cleanse your palate!

Maybe white grape juice or sparkling water would be more appropriate. LOL
I was under the impression that conditioning involved shaking the jars several times a day for about a week to distribute any moisture. I agree, though, with watching for moisture drops on the inside of the jar.
You also watch for contents that may stick to the jars during a session of shaking .
Thank you Pam and Jim I was wondering how well canned vegetables would dehydrate . I’m dehydrating onions right now. Every time I get a great price on onions I dehydrate them . Can’t have enough onions.❤️🙂
I do the same thing. If my supply of fresh onions gets long in the tooth ( about one month,) I just dehydrate those and replace them with fresh taking advantage of sales on onions.
I suspect that both the variety and lack of curing after harvest has greatly shortened the storage life of grocery store onions and potatoes.
Dehydrated sweet onions make really nice snacks. There is a delicious contrast between the mild onion flavor and the sugars in the onions. So good!

I always use frozen onions to make my dehydrated onions! Saves me from crying chopping pounds of onions!
This was real eye opening! Look at how much space you can save by dehydrating canned foods, especially if you don’t have a lot of room to store extras
Pam I have the Magic Mill Dehydrator too and I love it! The green beans, Lord have mercy, I made the mistake of trying some after they came out of the dehydrator and now I am hooked on them! I can barely get enough to put away! These are fantastic! If a person seasoned them to a child's liking they could possibly get them to eat some veggies! There are so many kids who refuse to eat them. Thankfully not mine were that way!! God bless and thank you for all the great videos!
You should see if canned jams/jellies turn into suitable fruit leather.
What a great idea! I have a Corsori that is very similar to what you have. Unfortunately it only came with 1 white tray that was considerably smaller so I brought a roll of nylon window screening and cut them to fit my trays. It works great to dehydrate the mixed vegetables that I buy at Aldi. I need to branch out and try other things and now I know that I can dry canned vegetables.

Those carrots! LOL. That is why I love dehydrating. I have limited storage and when I can store a #10 can of corn in a quart jar and 5# of carrots I'm always grateful when they are on my shekves for winter soups and casseroles. I sometimes dehydrate some of my home canned meats as well.

I just dehydrated canned pineapple slices for my husband. Just drain, shake a little and load the tray. He loves them! I can fit one can a tray so he got a nice bag of snacks.
I have pineapple chunks in my dehydrator right now. They turn out great!

When frozen veggies & fruits are on sale I buy them and dehydrate them. It gets me by till my garden starts producing. 😊

No I don't thaw them, I put them directly onto the dehydrating trays and start drying them. @@wendyr435
Freeze drying also works well with canned veggies and fruits and fresh ones too.

I dehydrate sweet potatoes as treats for my dog. He LOVES them. And my daughter's dog is allergic to so so many foods - sweet potato is one he CAN eat so I keep them going regularly so she can have jars for him too.

I made sea salt & vinegar beet chips almost a year ago. They are delicious and dried well. I think I often think that I have to dry the little buggers until they snap & crumble into my hands. I have to remind myself that I’m really looking for pliable state. But even my mistakes are consumed. That’s what I love about dehydrating foods. If you make an oops, drop it in your soup! 😂
But I especially did the beet chips because of beginning onset of arthritis. Beets are a natural anti inflammatory food.
So having some in a little baggie to take to work is great.

I'm always astonished how my entire carrot harvest from the garden fits in a jar or two when dehydrated. They do turn into hard little nuggets, but they always reconstitute just fine in soups. I'm going to try the pickled beets-- great idea!

I just remembered a couple of #10 cans of cut green beans that I have and didn’t use….then kinda forgot about them. I pulled them out today. Bb dat 12/12/22. I opened them and they smelled just like they should, no “off” scent. I drained them in a strainer and rinsed in with cold water, then to the dehydrator.

Remember Best Buy is an expiration date.
@@MaryWehmeierNo ma’am it is Best BUY date. These may not have all of the nutrients as fresher canned goods, but these are in no means “expired” (spoiled or should be thrown out). No pffft when opening the can, no odor, tasted fine.
@@MaryWehmeier Best buy dates are just that. The food will taste best if used by that date, but is still safe to eat years longer.
I dehydrate veggies to then later rehydrate into original foods. You can put the different veggies in one container to make a soup. Possibly put in bouillon in the container with the veggies. If the veggies are still rubbery they may mold in the storage.

got my 1st magic mill several years ago after starting to follow you. I now have 2 just like the solid black one you had. I saw the new stainless steel ones and debated for a bit, decided to just get the solid black one like i already have.
Oh, if I could only talk my husband into letting me open cans! I LOVE dehydrated beets, corn and peas. I am dehydrating fresh veggies as we speak, and I have done many ,many bags of frozen vegetables.

I've dehydrated veggies after multiple years of good harvests (resulting an over abundance in the pantry).. A space & jar saver!
Rehydrating would be great too, not just for snack, but light weight smaller space taker food that could be used once hydrated.

I don't care for the taste or texture of canned veggies, but I have dehydrated many cans and ground them up into a powder, all mixed together. This goes into almost everything I make. The current batch I'm working on is made of carrots, potatoes, corn, green beans, green peas, lima beans, celery, spinach, and beets. I also make a green powder from frozen spinach, collard greens, kale, turnip greens, broccoli, celery, and parsley.

@@RoseRedHomestead About half of it is just cans of assorted mixed veggies purchased on sale. Inexpensive and plenty of variety. If one is watching carbs, get individual cans of carrot, peas, beets, and beans and leave the corn and potatoes out.
I’d be curious to know if there’s any nutrition left in these. But I guess it would fill you up in an emergency.
I also do freeze dried mixed different veggies for snacking. Best blend so far is the Californian blend, add Brussels sprouts, onion, and celery with my favorite seasoning blend and a little Worcestershire or Soy if you prefer. It is delicious!
Hi! Just came across your channel. Just thus year I dehydrated canned and frozen veggies. They turned out great! I used frozen sliced carrots and still ended up with BBs. But when I put a couple in water to rehydrate, it did take longer but they plumped up good and tasted good. I had store bought green beans that were going to expire the end of this year so I used them. They were great too. I used frozen whole kernel corn and it was great too as well as the frozen green peas. I've used them for trail meals with my homemade 5min rice and also vermicelli noodles. I think I let mine dehydrate 10 to 12 hours. I'd have to check my notes, but I think I set the temp at 125 degrees for them. I love dehydrating my own onions and making onion powder and flakes. Potatoes also. Haven't tried sweet potatoes yet. I will though. I dehydrated eggs for the first time also and they came out good too. Glad I came across this. New sub here.

Ok, HELP!!! I have really been trying to stay as close to "no additives" in getting my family on a healthier way of life. Having said that my question is how to avoid additives and chemicals in commercially processed foods? I'm not looking for a fight ladies, I'm really lost here. If anyone can answer this, its this channel!! Love all you give us❤
I would think reading labels then researching what the specific additives are used for and what is known about them. Not all additives are horrible. Some are unavoidable in commercially prepared foods. Sometimes you can find a food brand that has better ingredients/additives than competitors. Once you have that knowledge, you can make better informed decisions about what commercially prepared foods you are willing to use and which foods you find important to prepare &/or preserve yourself.

I dehydrated some carrots. Most worked out great,but one batch would not rehydrate I even boiled some. Sure was glad I didn’t just throw in soup.
One thing I have done with the liquids from the jars/cans is to use it as veggie stock/soup base. The blends turn out delicious!

I' have taken mashed sweet potatoes and spread them on parchment paper 1/4 inch thick and drew lines through them as large 2x2 squares and seasoned them with cinnamon sugar. They dry well and are such a good snack! Crispy, They snap apart nicely. I was thinking just now that canned carrots would mash well and turn into chips as well.

I have recently been wondering if we could dehydrate canned vegetables. I am so glad you came out with this video. Thank you so much!
I did a whole bunch of canned veggies in my 2 Excalibur's At 145' for 2 hours and 135' for 10 more hours, and only had to do the beets longer about 2 more hours. And I did the large cans of beans that i had had I had 3 pinto and 3 kidney.
I dehydrated home boiled mushrooms , they shrunk in the boiling broth and then again in the dehydrator , they came out looking like little stones and are impossible to rehydrate to a normal form . I put 50g in a stew , brought it to a simmer for 2 hours and then left overnight , they came out tough and chewy , almost like a meat , I like them but they are not mushrooms .
I picked up pounds of sliced fresh mushrooms at our local produce store.
I dehydrated them without blanching, and they are very nice added to soups.
Personally , I hate mushrooms, but my sister reports that they are good.
@@OrlaQuirk I've dried them raw and they are great but as I love broth boiled mushrooms I thought I would try to dehydrate those too .

That was a great experiment, I'm dehydrating my pumpkins right now rather than canning them because I have quite a bit of canned already and it's so cool that a decent size pumpkin doesn't even fill a quart jar. I do frozen veggies quite often but never already canned, that's a cool idea if it's getting towards the age of needed used. Thank You for sharing and teaching.
I had a #10 can of refried beans that I dried. That would be handy to take with camping.
I've dehydrated a lot of canned pineapple rings, a and they are great. I did it originally to avoid the store bought "tin" taste of canned pineapple when it's been in the can too long. Since it so acid it eats at the metal lining. Anyway, I can the juice and dehydrate the rings. Works really nice.

I would try the freeze dryer. Always crispy. Never have to worry about timing my dehydrator to avoid over-drying

I like using the silicone mesh trays they sell for dehydrators!
Because dehydration is such a inexpensive process, I wonder if its worth getting most of the moisture out of fruit and veggies by dehydration then get the last of the moisture out in the freeze dryer ? With so little moisture left, you could really pack the fd trays and really extend the shelf life. Would be a nice experiment if you have a killawatt electric power meter.
We do not worry about using a KW meter and either dehydrate or freeze dry, depending on our needs. Jim
