I use my hand as well and I’m constantly using my fist like a hammer and right now I’m wearing a soft cast on my right wrist because I had a very painful flare up of tendinitis in my wrist probably from doing those things. So I would suggest do as I say and not as I do and use a mallet lol.

Although the taste would help...still would be a nasty mess on the griddle...the italian dressing would burn the same way....

i don't have a traditional blackstone what i have is a two burner outdoor cook top with a heavy rolled steel flattop griddle that's removable. got it from a company in Texas, i live in the south where its hot and muggy. even with a good cleaning, heating oil on it after cleaning, and keeping it covered i constantly fight light surface rust. is there any other option other than taking the hardtop off and keeping it inside

I’m with you brother. If you’re marinating something, you need acidity in the marinade to penetrate the pores of the meat you’re marinating. Only way around this is a chamber vac which uses pressure to open the pores of the meat.
