They work together to make the cake or cookies rise. It works really well too. :)

I Love you Gemma. You are an inspiration to this non baker. Your 3 ingredient cookies are the absolute best!!! I switch them up a bit. So I've added a splash of vanilla and 1/4 c.coco minus 1/4c. Flour to the shortbread cookie. I made a half batch. Oh my. Yummy The cookies are fluffy with a lovely texture and little crumble and just enough chocolate to satisfy the chocolate craving. Next time I'm going to add fresh lemon for a lemony shortbread cookie. Thank your for the time and dedication in making baking easy and enjoyable!!!

Happened again today. So we're remedying that situation tomorrow. Wish I had found this before I tried pounding chia seeds by hand in pestle and mortar!! Ah well, hour and half workout - twill do me the world of good! :)

Really? :O I have used aquafaba for brownies which turned out incredible, but I use chickpea flour for scrambled eggs (which tastes soo much better than the real thing imo). I didn't know your could use AF for that as well
Amy Thanina You just mix it with water 1:1 to make a batter like consistency. Season to taste with whatever you like. Black salt gives it more of an eggy flavour. Pour into a pan with a little oil and fry up, just like normal sxrambled eggs. It takes a little longer to set up and ypu want to fry it up well to get rid of any bitterness of the flour, but it is amazing. Doesn't really taste like scrambled eggs, but in my opinion it is much better. You can ever fry up some veggies first and then pour the mixture over it.

Ah! I am not sure there really is a substitute for butter! real butter, from grass fed cows is actually good for you! better than alternatives. Coconut oil is superb for some things, a natural alternative. :)
Very late comment but making tofu is very simple. Gently simmer 12 cups of soy milk (store-bought or homemade), and when it starts to boil, add in 2 to 3 tablespoons of vinegar and one tablespoon of salt--bit by bit. Keep it simmering while it still curdles, then drain the curds with a cheesecloth. You can alter the texture of the tofu by adjusting pressure (e.g. to make it firm, leave the curd in the cheesecloth and press it down with a heavy pot filled with water overnight). Tip: If you make the soy milk at home, you don't need to throw the drained soy solids away. In Korean cuisines they incorporate these solids (called "biji" in Korean) into spicy stews or even summertime cold noodles.

This is not my specialty. It is important to understand the place of eggs in any recipe, what they are there for! In a baked cheesecake they have two functions, to bind the ingredients and add to the leavening/raising of the bake. There are a number of vegan options online, most mention strained/greek yogurt :)

I’m gonna try with an old cake recipe I have. I think I’m going to try the tofu first since I already have some open and it sounds like it’ll be relatively plain tasting
thank you so much! i subbed eggs for buttermilk - but i guess the batter started splitting or turning weird (sugar+ butter + eggs). 2 tbsp of condensed milk helped stabilise this. but may be i could have added the buttermilk later rather than at the sugar+butter stage. and may be i could have folded it in rather than mix/ whisk it in. thanks again for your awesome suggestions!

I've already used applesauce as a substitute in baking several times in the past. My recipes came out just fine!

thank you so much! i subbed eggs for buttermilk - but i guess the batter started splitting or turning weird (sugar+ butter + eggs). 2 tbsp of condensed milk helped stabilise this. but may be i could have added the buttermilk later rather than at the sugar+butter stage. and may be i could have folded it in rather than mix/ whisk it in.
