    When I was taking Foods and Nutrition in high school (in the 60s) we learned that if you are short an egg or even two in a cake or cookie recipe to use a teaspoon of vinegar and add a half teaspoon of baking soda for each egg. They work together to make the cake or cookies rise. It works really well too. :)

      i am also a vegetarian turning into a vegan!...but i come from a brown family so they arnt respecting my choice of being a full vegan :(

      violett jai IM INDIAN HAHAH! My mom says that I don't have to become vegan right away since I'm only 14, but she respects my decisions. It will probably be a while until I become 100% vegan... I eat vegan when I'm at home but when I go out I don't because I live in the south and there are not vegan options.

    this is a legit story, yesterday night i was making her red velvet mug cake but half way through I forgot that I ran out of eggs and it was 10pm. Had to scrap the whole thing, ahhhh. If only she posted this video erlier!

    You're an absolute life saver Gemma. Thanks. A wee lassie in my girls class is vegan (but allowed dairy) and every time there is a class celebration and someone cooks they leave her out. Happened again today. So we're remedying that situation tomorrow. Wish I had found this before I tried pounding chia seeds by hand in pestle and mortar!! Ah well, hour and half workout - twill do me the world of good! :)

Yes, it is difficult for some kids, they really hate to be excluded, and yet it is so important to get it right.       It's super easy, pour some milk, add lemon juice in it (i add like one tablespoon or two) and wait. Done !

      Gemma had mentioned in one of her videos...to add a few drops of lime to the milk and it will turn into buttermilk.
      For the exact procedure visit her website www.biggerbolderbaking.com and type homemade buttermilk...you should be able to find it.

      Ah! this is an old piece of advice! eggs are not so bad for you, they are a convenient and nourishing food. Do a little research into this :)

    Have you heard of Aqua Faba? They're the best egg substitute in anything. Even scrambled eggs!

      Really? :O I have used aquafaba for brownies which turned out incredible, but I use chickpea flour for scrambled eggs (which tastes soo much better than the real thing imo). I didn't know your could use AF for that as well

      Amy Thanina You just mix it with water 1:1 to make a batter like consistency.
      Season to taste with whatever you like. Black salt gives it more of an eggy flavour.
      Pour into a pan with a little oil and fry up, just like normal sxrambled eggs. It takes a little longer to set up and ypu want to fry it up well to get rid of any bitterness of the flour, but it is amazing.
      Doesn't really taste like scrambled eggs, but in my opinion it is much better.
      You can ever fry up some veggies first and then pour the mixture over it.

      Ah! I am not sure there really is a substitute for butter! real butter, from grass fed cows is actually good for you! better than alternatives. Coconut oil is superb for some things, a natural alternative. :)

      TOFU is a bean curd, made from soy beans. It is not my thing really, I think it would be long process for BBB.

      Very late comment but making tofu is very simple. Gently simmer 12 cups of soy milk (store-bought or homemade), and when it starts to boil, add in 2 to 3 tablespoons of vinegar and one tablespoon of salt--bit by bit. Keep it simmering while it still curdles, then drain the curds with a cheesecloth. You can alter the texture of the tofu by adjusting pressure (e.g. to make it firm, leave the curd in the cheesecloth and press it down with a heavy pot filled with water overnight).
      Tip: If you make the soy milk at home, you don't need to throw the drained soy solids away. In Korean cuisines they incorporate these solids (called "biji" in Korean) into spicy stews or even summertime cold noodles.

      I literally FREAKED OUT when I saw you had replied.     Hey Gemma! Yet another GREAT video... I will say as an alternative baker though I use organic pumpkin puree ALOT as my egg replacer in cakes and cupcakes. I find 1/4 cup of pumpkin puree per med/large egg is a perfect replacement. Thanks again for this wonderful Bold Baking Basic!
