This is a great video. THank you. FYI,When I need a substitute for 4 eggs, I have been using a combination of 2 flax eggs and the a 2 egg equivelent of baking soda and vinegar. It has always worked for cakes and cookies.

So many options! I've only ever used applesauce and flax eggs. Sometimes, I use both - flax for the eggs and applesauce for the oil. I don't bake very often, though, so I don't need too many choices.

When you got to the yogurt part, I was like, "What are you saying? You hate that stuff!" LOL. Lots of good hints here; so many options I'd never considered and will now keep in mind. TFP!
I grind more flax and chia in my coffee grinder than I do coffee! When you grind it super fine, it eliminates a lot of texture issues that those whole ingredients create. There is a way to separate the fiber of flax and chia from the gel protein if the confection is not hearty enough for it such as birthday cakes and things.
I used Justin’s Chocolate Hazelnut & Almond Butter in my pancakes. It was all I had available. Appreciate the nut butter substitution for egg. My pancakes were amaaazing.
I buy the little pots of apple purée because when I have bought jars I end up throwing it away as it goes mouldy in the fridge It isn't ideal but it is better than wasting it. I also mix sparkling water with the chickpea flour in pancake batter as it does make it fluffier.
@@tamcon72 I have been rereading Lillian R. Lieber who wrote several books in the 1940s on topics like Einstein's theory of relativity (and not just the easy stuff). She wrote in an interesting style and a note in the preface says: "This is not intended to be free verse. Writing each phrase on a separate line facilitates rapid reading, and everyone is in a hurry nowadays." Plus I am doing research in free verse. Personal research on how it works. As well as practising the ideas for myself.

The only yogurt I like is Silk. I've tried the others like Kite Hill and Forager and am not a fan. I find that the flour is always not a 1:1 and can change the texture. Aquafaba makes a great meringue. Great video. Thank you. When my baked goods fail. I run to Whole Foods. They have delicious baked goods always :)

Ive used Just Egg to make the Double Tree Hilton Cookies (they released the recipe earlier this year). They are bomb! People love them! Sadly just egg is not cost effective long term.

Wow. I'm surprised you didn't use just flax gel. The kind I've made includes boiling whole flax seeds then straining them. It makes a great gel.

I am making my own apple sauce by carmelising peeled and sliced apples on the pan a lil and then blending it with a lil bit of water. Works very well.

I make my own yogurt from plain soy milk and a vegan yogurt culture and it is really good. Can also use coconut milk or homemade almond milk.
