Baked penne/ Penne Al forno

Recipe we are making is for 4 half trays!
⁃ 24 sweet sausage links without the casing
⁃ 2.5 pounds of shredded mozzarella
⁃ 4 lbs of penne pasta
⁃ Salt and pepper to taste! But remember the sausage and cheeses are already salty and the sauce has salt as well!
⁃ 1/2 cup Romano grated cheese or to taste per half tray
⁃ 1.5 cups of mascarpone cheese per tray
⁃ Cook pasta for only 10 minutes or Al dente because it will continue to cook in the oven
For the sauce
⁃ 4 cans of 28oz crushed tomato
⁃ Salt and pepper to taste
⁃ 1 medium onion
⁃ 6 garlic cloves
⁃ 6 leaves of fresh basil
