- I know everyone loved my chicken cutlets when I posted them a while back and realized I never posted my recipe❤️! my daughter mary and her boyfriend Paulie came to visit for the weekend and they love my Chicken Parmigiana. After a beautiful day at the beach we got to sit down outside for a delicious meal. The weather was so nice last night and we got to chatting all night. I love when we all get together at the Jersey shore. So many memories in this home with everyone. 2 lbs of thinly sliced chicken cutlets
4 eggs
1/4 cup of Romano grated cheese to be mixed in with egg mixture
1/2 cup of Romano grated cheese to be mixed in with breadcrumb
2 tbsp of fresh parsley
Sprinkle of adobo
Sprinkle of garlic powder
1 lb piece of fresh mozzarella
1.5 jars of Marinara sauce
Salt to pepper to taste but I never add it because the seasoning is amazing
Vegetable oil for frying
2 cups of 4C seasoned breadcrumb

May I ask a question? What does soaking the cutlets in eggs do?
I find that the egg tenderizes the chicken a bit, but definitely also gives it flavor like any marinade would. I even soak them from the night before in the fridge. I use all the same ingredients, the only thing is that I don’t prefer the cutlets that thin - I find that they get too dry and chewy that way. I do about twice the thickness she shows here and they are moist and so delicious!
@@mariamiles4492 thank you for taking the time to answer my question. I never knew eggs could flavor and tenderize the chicken. Up until recently, I always dipped the cutlets in flour before the eggs. I’ve seen many people skip that step online, so I stopped doing that. Not sure I can tell a difference though.
How thin are the chicken breast cut
Food safety …..if you’re gonna have polished nails you should have gloves on. Polish can chip and contaminate food and enough with the baby doll it gets old after a while
