Sour creme gives the cheesecake a tart flavour, honestly speaking I haven't tried substituting sour cream for heavy cream on this recipe. If you did try to substitute it please let me know the result. Sorry can't be of help

just loosen the sides then at the buttom of the pan there is a hole where you can push the cheese cake up

Thomas Heng sour cream is cultured thus provides different result , in my opinion sour cream is really necessary in this recipe
