Does the sugar make any difference in the stability? I try to cut down on sugar as much as possible and since Dulce de Leche is sweet already, would it change the outcome to reduce or eliminate the sugar altogether?

Yes, i work with agar agar. You can replace it for gelatine. Just diffetent amount.
