I've made seitan the other day , but it was crumbled into pieces. & I must say barely left . I mean 70gm, using 1kg whole wheat flour
Thank you for watching our video. Please follow the recipe and you should be able to get better results. It also depends on the type of flour used.
Don't use ashirvaad atta for gluten extraction. Best option is maida or white flour. You will get around 350-400gm of gluten dough from 1kg maida.
Leave little bit of starch in gluten so that it remains soft. Grill it in tandoor and dip in molten butter. That would taste heavenly. Do marinate the seitan in spices, yoghurt before grilling.
I suggest keeping the dough idle for atleast 3 or more hours after making dough and before washing. Using maida would give you much more yield.
I have been experimenting with different options to make seitan for the whole year. Found that maida is the best option for tastiest seitan. It has to be processed properly so that the end result is addictive to our taste pallette. Just after its grilled, it has to be dipped in molten butter to make it juicy with texture like chicken. Along with marinade it's the best tikka I ever had in my life.
