크레이프 케이크를 돌돌말아 색다른 모양의 망고 크레이프 케이크를 만들었어요~
롤케이크 처럼 크레이프를 크림과 망고를 넣어 돌돌 말아 옆으로 세워 만들어 봤는데 자른 단면이 독특하고 색다르더라구요~^^
겉면은 망고 퓌레를 넣은 글레이즈로 깔끔하게 코팅해서 고급스러운 느낌도 나는 것 같아요~
버터크림을 만들어 냉장실에 굳히면 모양이 잘 유지되고 크림이 망고 맛과 잘 어울려 맛있답니다~^^
망고 슬라이스는 최대한 얇게 썰어 넣어야 잘 말리는 것 같아요~~
어디서도 보지 못한 모양의 케이크라서 과정은 많고 복잡하지만 재미있게 만들었답니다~^^

▶재료
달걀 3개
설탕 40g
소금 1g
박력분 150g
우유 375g
녹인 무염버터 50g
망고
무염버터 300g
슈가파우더 250g
생크림 100g
바닐라익스트랙 10g
망고 퓌레 80g
화이트 초콜릿 100g
생크림 40g
물엿 60g
판젤라틴 5g
따뜻한 망고 퓌레 80g
식용색소 (주황, 노랑, 하양)
▶레시피
1. 달걀에 설탕과 소금을 넣고 섞은 뒤 박력분을 체 쳐 넣고 우유 100g 정도를 넣고 섞는다.
2. 남은 우유를 모두 넣고 섞고 녹인 무염버터를 넣고 섞은 뒤 체에 걸러 냉장실에서 1시간 정도 휴지 시킨다.
3. 약불에 팬을 올리고 식용유를 바른 뒤 반죽을 붓고 넓게 펴 기포가 올라오면 뒤집어 살짝 더 익히고 팬에서 내려 식힌다.
4. 실온에서 말랑해진 무염버터를 부드럽게 풀고 슈가파우더를 2번에 나눠 넣고 휘핑하다가 생크림과 바닐라익스트랙을 넣고 5분 이상 풍성해질 때까지 충분히 휘핑한다.
5. 망고 퓌레를 넣고 휘핑해 마무리한다.
6. 식힌 크레이프를 3등분 하고 크레이프를 2~3장 이어 붙이고 크림을 바른 뒤 돌돌만다.
7. 크레이프를 연결해 붙여 놓고 크림을 바르고 슬라이스한 망고를 올리고 크림으로 덮은 뒤 반복하여 돌돌만다.
8. 어느 정도 말아 크기가 커지면 한쪽 면에 크림을 바르고 크림을 바른쪽이 밑으로 가도록 접시에 올린다.
9. 크림을 바르고 망고를 올린 크레이프를 한장씩 옆으로 붙여 밀착시키고 전체적으로 크림을 매끄럽게 바르고 냉장실에서 5시간 이상 굳힌다.
10. 굳힌 케이크를 다시 꺼내 크림을 발라 정리한다.
11. 화이트 초콜릿에 생크림과 물엿을 넣고 전자레인지에 30초 정도 돌려 녹이고 따뜻한 망고퓌레를 넣고 섞은 뒤 불린 판젤라틴을 넣고 섞는다.
12. 식용색소를 넣어 색을 내고 체에 거른 뒤 케이크 위에 부어 코팅하고 냉장실에서 20분 정도 굳힌다.

300g Unsalted butter
250g Powdered sugar
100g Whipping cream
10g Vanilla extract
80g Mango puree
100g White chocolate
40g Whipping cream
60g Starch syrup
5g Gelatin sheet
80g Warm mango puree
Food coloring (orange, yellow, white)

@evangus I guess she added a few more layers of crepe before coating the cake with butter cream and mango mousse. It is still the same cake. Making the surface even and round was her skill.
@evangus its pretty clear its the same cake, it's still made of a crepe. it's just from the side at a good angle and after the frosting made the top look more even chill

evangus i mean does it really matter if it’s the same recipe? i mean if you were the one showcasing the cake wouldn’t you want the most perfect cake to be displayed?
evangus i wouldn’t consider it cheating. plus, the video shows you the steps. whether or not you make it *perfect* will depend on your level of skill i guess. think about it. telling a beginner to make a goal in soccer and telling a well educated player to make a goal. there will probably be different results. not speaking universally but believe what you want to believe i ain’t gonna argue over a cake

Also making it stand was a bit of a struggle hahah I guess it has something to do with the room temp and the batter. Better beat those things until the consistency you see in the video :3

phantic I agree. In fact any time I buy farm eggs, or extra large eggs, I always have one or two twins.
We had a chicken who layed double-yolkers all the time. It has a lot to do with the breed of chicken, but also the individual chicken itself. Hybrid hens, who are the ones used in the industry, only rarely lay double-yolkers, so if you buy supermarket eggs it's very unlikely that you've come across them.

This cake is absolutely beautifully presented when assembled this way - truly spectacular for a special event. However, if assembled in layers it would be just as delicious and you would be more likely to make it more often.

Maybe one of the eggs had 2 egg yolks. That happens often
make it into four eggs, it's a lot, so I've reduced the amount of crepe recipe to match the other amount~

If I dare to make this cake, I know how it will end...flour everywhere, eggs everywhere, uneven crepes, a monstrous roll, cream in my elbows somehow, and a nervous crying and screaming person: me. So, I do really admire your patience, your technique . I know I'll never be that perfect. (I also love those tiny animals watching you, they are simply adorable!!)
