Ik agree that the sette is not ideal for pour-overs, but it is possible to make a decent V60. Most of is don't buy 2 grinders, one dedicated for filter and another one for espresso, although this seems ideal. For v60 pour-overs with the sette, I recommend to make small batches of coffee, use low grind:coffee ratios, use a finer grind, and go for less pours with a higher coffee bed. Why? Because the grinder is better at finer grind settings. Use the other variables to decrease extraction, adjusting for the increased extraction due to the finer grind. A more elaborate explanation. Use a smaller grind size setting since grind size distribution is more unimodal using a finer grind size, especially on the sette. To adjust for the finer grind, use a lower ratio to decrease extraction. Also, use 1 pour after the bloom to decrease extraction and elevate the coffeebed. The latter enhances the gravitational effect on flow thereby decreasing extraction time and, hence, decreases extraction as well. In addition, when the coffeebed is higher, this increases the surface area of filterpaper whereto the fines can stick to, thereby decreasing the risk of chocking the coffeebed. My recipe is 20 g of coffee to 300 g of water. I use a relatively fine grind, just slightly courser than aeropress (grind size setting 15E +-1; 1 extra shim, for calibration: espresso usually ~8E). 30 s bloom with 60 g of water and an agressive swirl. 1 pour after the bloom to 300 g total weight; this pour should finish around 1:30. Even the bed with a gentle swirl. The draw down should finish between 3 and 3.30. The cup should taste well-balanced and sweet. Sometimes it chokes a bit; then the brew can be rescued by ditching the last extraction after e.g., 3 min or 3.30. Alternatively, two pours after the bloom is still possible. One pour of of 140 g after bloom the finishes around 50s-1 min in brew. Another pour of 100 g at 1.30 min that finishes at 1.45.
Totally agree I have an encore for my pour overs and my moccamaster and a 270Wi for my Rocket espresso. Used to have a Eureka mignon for my espresso but let a friend borrow it and it never returned lol
Thanks for the review. I have the 270 and the timed grind function of that model isn't really that useful in my opinion but the fine adjustment is very useful. I really only use it as a measured dose grinder anyway. I've never actually kept beans in the hopper of any grinder I've owned. Grind to weight would be nice I think but might not be worth the extra $200. I'll slightly disagree about the the inability to do filter coffee. I've installed 1 shim so maybe with 2 it isn't really usable for filter coffee. In any case with 1 shim I can get good espresso grind as well as drip coffee grind. I've not done a lot with pour over but the grind I've used for that isn't much different than what I use for drip coffee, maybe I'm not doin it right but the coffee tastes good in either case. And yea for AeroPress it's a very good grinder!
I bought the 270wi last week. Even on settings 2A it could not grind fine for my Flair58. Stopped using it after 2 days. A waste of money if ppl think out of the box it will grind good for espresso. Anyway prior to purchasing it, so many youtuber praising it sky high but none really are honest with its weakness. Today i was looking at videos searched for 270wi and stumbled on your video here. Thank you for a clear review on this baratza. Out of the box, need to add a shim. Perhaps baratza themselves shud put that in their manuals or better still, add one shim when shipped out. However since you are the one person i found to be honest,.. i am unscribing most or those other youtubers who just gloss over everything and never really saying it as it is. I have the older 270W and I used both shims and I still found that I couldn't get fine enough for my machine (Rocket Giotto). I'd put a third shim in but I can't seem to get one in Australia.
I’d call baratza they have amazing customer support and my guess is they will ship you one. I’d recommend if it’s older then 2 years to get a new burr set

Yeah the burrs sound nice for an upgrade also I think bellow would work for zero retention. When I do my specialita comparison I’ll do a retention test
Wouldn't necessarily recommend bellows as this isn't really meant to be a single dose grinder. Unless you just remove the hopper and use the bellows to clear out any grinds. I just clean mine weekly and there isnt ever much grind retention

They mailed me the part right away, at no cost (I guess they are aware of the problem) But I also had problems with the micro adjust it tends to move coarser while grinding and of course it affected the shot quality. So sadly I ended up selling it.

Thinking about the 270 since I have a scale. Maybe the eureka perfetto? I care more about espresso grind quality than noise. Want to upgrade from the breville SGP, but really having trouble pulling the trigger!
Did you pull the trigger? If so, any regrets? Worth the extra $200 over the SGP? I’m looking at buying the Bambino plus today while on sale and I am not sure which grinder to go with. I have it narrowed down to this Sette 270 or save some cash with the SGP.
@@joelf5565 I had the 270 and returned for the wi as it is far easier for me to get my weight and I find it far more consistent than .2/.3 off as the i is intelligent so it fixes itself.
Grinder is pretty flawed design with dosing directly into the portafilter it tends to get an uneven distribution and will often pull to one side it have a dead spot. Using a dosing cup fixes this problem but is pretty shit mod for people’s routine. You can see in these examples it can’t get an even flow. I think later iterations if this grinder have a slower set of gears and reduces noise significantly. The gearbox is a replaceable part for ~ 50usd
I do enjoy dosing directly in the portafilter my self as long as you distribute nicely by taping and then using a wdt and distribution tool I don’t the results differ then going into a separate dosing cup. But yeah it would be great if the grinder was quieter. Is the motor you are referring to quieter?
Yeah I have newer model and still super loud. I would rather have the straight through design to save on retention. I just use a distribution took so doesn't affect my workflow at all. I get even flow with mine

@@JoeyVaracalli what you're saying is unclear to me. I've used three baratza 270 units. With all three units, I grind between 4 and 5. Meaning I can grind much much finer. And one of the units is now almost three years old. An out of the box grinder should not need a single shim. I strongly suggest you reach out to Baratza as you clearly have a defective unit. And you are unknowingly suggesting people modify their units when they do not have to.

It is a great and loud grinder, B U T longevity is a problem due to poor quality with the gearbox mechanism

Yeah I think the eureka mignon is pretty good but if you have the cash ceado e6p or e5p is better

Maybe the Baratza Vario W+. Keeps the same functionality of grind by weight but is quieter and more versatile. But it is slower.

Hi. You don't explain to your viewers why you think it's 100% absolutely necessary to add a shim, or two, straight out the box.
If you use the grinder for espresso it is because in my experience it doesn’t go fine enough for certain beans
